Happy Halloween Y'all! I don't know about anyone else, but October was CRAZY busy! And with Halloween the kick off to the holiday season...I fear it won't be any less crazy here! So, with that said, why not kick off the holiday season in style and throw a little shindig to celebrate… MORE

My favorite family cooking traditions
I love to get in the kitchen with my mom and my grandma :) I always learn something new from them and they taught me that cooking from scratch is a dying tradition that I need to keep going before it is lost. I also love to share my cooking space with my son! It's amazing how cooking can be so special and bring about a new bond!

Amazing Muffin Cups
These were so good and went very well with pancakes as a nice breakfast for dinner! These would be great to make up a batch (or two!) to have a nice brunch as well! I did not add the bell pepper as I didn't have it on hand. To get the potatoes to crisp up, after 15 minutes I turned the broiler on and just watched until they were brown. The whole family loved these!

Oat and Blueberry Muffins
These were really simple to make and very flavorful! I was looking for a more nutritious and filling muffin for everyone to grab a quick breakfast and these do just that. The only change I made was using 1/4 cup of natural agave syrup in place of the sugar. These smell great while baking and I will make these again!

Pork Carnitas with Cilantro Tomatillo Sauce
My family really enjoyed this new take on taco night! I chose not to cube the pork and placed it in my slow cooker on top of the sliced onions. I rubbed the pork with the oil and seasonings, and set it on low for 7 hours. We just shredded our 2.5 pound pork shoulder, topped with the tomatillo sauce, and piled it in a corn tortilla. It was a quick dinner on the table!
