Six Can Chicken Tortilla Soup
Unbelievable easy, and delicious. Use this recipe as a base for your own version. I added one avocado, some cilanro, a lime and a few shakes of cayenne pepper to spice it up a bit. Great recipe to learn how to make tortilla soup!

Spinach Quiche
This was great. Use HALF THE BUTTER. the other reviews are right, i used 1/4 cup and it was fabulous. Also threw in some cumin and cayanne pepper. i didnt have any garlic, but it was still D-lish, everyone loved it!

Curried Coconut Chicken
Good Stuff. I modified the recipe big time, by cutting the amount of chicken down and adding zucchini, squash, button mushrooms and carrots. I sautéed the carotts in the beginning where it calls for the chicken, and added the rest of the veggies in with the canned tomatoes. If I make it again, I will probably throw in a chopped sweet potato. It tasted very similar to a dish i order at my favorite local thai restaurant, they include sweet potato and it is fabulous! Serve over jasmine rice, of couse!
