Herb Roasted Pork

amazing!! made this tonight and my husband, who is not a fan of pork, kept telling me it was great... substituted the white wine with cooking sherry, also added 1 can chicken broth & 1 tbsp cornstarch to the pan drippings as suggested by others.. yummy... cooked my 2 lber for 1.5 hrs until it was an internal temp. of just over 150 degrees.. perfect!!

Soft Oatmeal Cookies

made this at the recommendation of a friend.. and loved it! made some changes: added 2 pinches of Epicure's gingerbread spice, 1/3 cup cinnamon chips, 1 cup mini bittersweet chocolate chips. ... they are amazing! did NOT flatten with a fork, baked 9 mins and they were perfect.

Chococonut Chip Cookies

SO good! :) Made these last night for the first time, and split the cookie mix in half. Mixed one half with 1 cup semi sweet chocolate chips, and baked. Mixed the other half with the new (or new to me at least) MINT semi sweet chocolate chips, and baked. Both were excellent!!! Brought them in to work today and everyone loved them.

Tastes delicious! I make this the evening before, as otherwise it is just not the right consistency. A night's rest makes it perfect! I have made this three times now and it is a crowd favourite!

Strawberry Pretzel Salad

Excellent! The idea kind of worried me, but I decided to give it a try due to all the great reviews, and we are all glad I did! I made this with light Jell-o, and took the advice of another to put the pretzel crust into the freezer, as well as melting the butter a bit to form the crust better. DH asked me to make this for his Easter pot luck at work...

Zesty Slow Cooker Chicken Barbecue

I made this when we had friends over, and everyone loved it! We served them on buns with smoe shredded Mozzarella cheese overtop... even my DH who is such a picky eater has requested i make enough of it so there is left overs to bring to work the next day in his lunch!! The 2nd time i made it we had fresh chicken breast -- so I cooked it in chicken broth for 2 hours on high. Strained it & forked it apart. Then added the Bullseye BBQ, etc. and let it cook on high for another hour and 15 mins?? Then the hubby couldn't wait anymore and dug in. :D It was perfect!!! Not dry at all.. and time friendly when coming home and preparing it AFTER work.

Pumpkin Cake III

Have made this twice now... First time for a housewarming pot luck and it was loved by all (even a guy who claimed he hated pumpkin!). Used a nice cream cheese icing and it was perfect. Had to e-mail the recipe to 4 women the next day because their men told them they want it made for them again! A friend & family favourite!! Only thing i noticed, I had to bake it for upwards to an hour before it was ready.. the recommended cook time is just not enough! even with a brand new oven!!
