J.P.'s Big Daddy Biscuits
Very nice recipe if you're looking for something quick with the ingredients that you have in your kitchen. It requires little preparation and is done quickly. I thought the prep time was highly exaggerated, and would have said 10 minutes myself. Cook time was exactly 14 minutes for me. Would be longer if you used a larger cutter for the biscuits, which I would recommend and will be doing myself next time. I substituted unsalted stuck butter for the shortening. I did not over-kneed the dough, which would make them hard. I placed the biscuits touching on the sheet. Would suggest erring on the side of thick when rolling out dough. Yields a nice, fat biscuit. Nice no-frills recipe that reminds me of the simple old school Betty Crocker recipe, only a higher biscuit, which is nice. OH! Forgot to mention, add the milk slowly and stop when you have enough. I used a little under my one cup of milk.

Sean's Falafel and Cucumber Sauce
It's a decent recipe, but I found the mixture too bland. I added 1 TB flax seed - ground. Then I added 1/2 tb of oregano for flavor. Lastly, I added 1 cup basmati rice half cooked for thickening. Then I let it set in my fridge for a hour or so. Now it's perfect. Thanks!

Downeast Maine Pumpkin Bread
ABSOLUTELY PERFECT! The only thing I changed was to add a strussel topping. You know - Sugar + Cinnamon + Butter and sprinkle over the top before you bake it. It was the finishing touch!
