Pesto Cheesy Chicken Rolls

I love dishes that look and taste like something you'd eat at a restaurant. This is one of those, yet the preparation wasn't too hard. I seasoned the breasts with salt and pepper before adding the basil (my own recipe) and mozzarella, but I followed the recipe otherwise. In my oven, these were done in just over 40 minutes. I'll keep this recipe on hand for the next time I'd like to impress company!

Risotto with Truffle and Parmesan

This was sinfully delicious, and reminded me of a risotto I enjoyed on my honeymoon in Venice. There's just nothing like a decadent, parmesan risotto! The aroma coming from the pan as it's cooking is irresistible, but going the "low and slow" route really pays off with this one. My only change for next time would be cutting the truffle oil in half, I thought it was too strong and would've preferred to taste all the ingredients equally. Thanks so much for sharing, every time I make this it's met with rave reviews!

Spicy Italian Pork Cutlets

Five stars from me based on the ease it took cooking these, and five stars from hubby based on taste (I don't really eat meat). I loved that these weren't breaded, and the aroma as I was preparing them was phenomenal! I eye-balled the wine and chicken broth, and upped the red pepper flakes to 1/2 tsp for my spice-a-holic hubby, but otherwise followed the recipe as written. Served with yummy roasted potatoes also on this site, and salad. Will definitely make again! (Hubby said hopefully soon :)

Kristen's Parmesan Roasted Potatoes

I added some garlic but otherwise followed the recipe as written- to quote the recipe submitter, this is a delicious, easy side dish! I usually cut potatoes into wedges when I make seasoned, oven roasted potatoes, but I cut into 1" discs and they had a great texture. This is a "repeat" recipe for sure :)

Waffles I

Hubby and I really enjoyed these! I added 1/4 tsp cinnamon and upped the vanilla extract to 1 Tbsp to increase the flavor. Took less than 5 minutes to whip this batter together. Yum!!

Garlic Vegetable Saute

Yum! A great vegetable side with a kick! My husband who isn't the veggie-lover that I am raved, bc he adores anything spicy ;) My only change was omitting the butter, to try and cut a bit of fat. The dish didn't suffer following this omission, deelish!!! Thanks for sharing Anna

Grilled Shrimp Scampi

My husband loved this! I stay away from seafood and meat but he really enjoyed...he's a spice-a-holic lol so upped the red pepper flakes, and I broiled for 3 minutes per side since I don't have a bbq grill. Hubby loved the taste and I loved the simple method. Thanks for sharing!

Grilled Corn on the Cob

I was dreaming of the charred corn on the cob I enjoy at street fairs and the San Gennaro festival in Little Italy. This wasn't quite the same, but had great taste nonetheless. I followed the recipe verbatim, except used my cuisinart grill instead of an outdoor one (apartment dweller :/ ), maybe an outdoor grill as the recipe called for would have been better. Thank you for sharing!

Annie's Fruit Salsa and Cinnamon Chips

I used Stacy's cinnamon pita chips to cut down on time, and raspberry preserves due to what I had on hand, but otherwise followed the recipe. This was delicious, a fun and festive treat that went nicely with our "welcome summer" Memorial Day bbq. I made the salsa about 6 hours before putting it out and experienced no problems with the apples browning, despite what some reviewers have said. Great recipe Ann!

Irish Egg Rolls

As far as St. Patrick's day leftovers go, it's hard to beat corned beef w/ mustard on rye! However, I thought I'd give this recipe a try, and I'm glad i did, they were really tasty, fun to make and to eat! I'm also glad I followed another reviewer's suggestion of baking instead of frying, they were done after 20 minutes at 400 degrees, yum!

Polenta with Rosemary and Parmesan

WOW! No more frozen Trader Joe's polenta for me! This was fantastic! I would like to play around with flavor combos in the future (maybe basil instead of rosemary, or chopped spinach..) but at the same time don't want to mess with the perfection of this recipe :p Thank you for sharing this recipe!

Light Southwestern Tomato Pasta

I splashed in some red wine vinegar when I added the olive oil to up the flavor. The cilantro added an interesting and yummy kick. This was a little different than my usual weeknight pasta dishes, thank you for sharing Rachel!

Quick and Easy Black Bean Soup

I'm such a sucker for Chef John's recipes! I prefer a healthier black bean soup but saw the addition of bacon, thought of my fiance and knew I had to try this...the bacon definitely takes this recipe over the top! Thanks Chef John for sharing (and for your videos which I always enjoy :)!

Yum! This will warm you up this time of year...extra points for being a healthy dish! As written the recipe is a touch bland, hence 4 stars, but once I subbed the water for low-sodium vegetable broth and used fresh herbs and tomatoes, I was a happy camper! Thanks for sharing your recipe Marie!

Chef John's Patatas Bravas

WOW muy delicioso! My fiance and I really enjoyed these patatas bravas! I was drooling waiting for them to finish, that's how amazing the kitchen smelled ;) Followed the recipe verbatim, it was quite simple. I especially loved the dipping sauce (any excuse to use my mortar and pestle!!). Thanks John for sharing your recipe! Fierce!
