About this Cook
Hi! I'm 29 and a school counselor, the oldest of four kids, happily married, lover of food, dogs, relaxing, decorating and hostessing. I was born and raised in New York City- home to the world's best restaurants and quite possibly the tiniest kitchens...in spite of this I love to cook, especially create new recipes using "ordinary" ingredients!
My favorite things to cook
I'm Irish/Italian and my husband is Salvadoran/Dominican, so I cook a lot of recipes from those cuisines, (especially Italian!), or any dish calling for fresh ingredients and great seasonings or spices. As far as favorite cooking methods, I prefer cooking sauces, chili, or anything in a big pot or pan on the stove, where I am free to use my favorite method, the "taste test". I don't love baking, only because the recipes are so exact- I feel like there's no room to play around. But occasionally my sweet tooth gets me craving cookies and brownies...so when the mood hits, I bake! :)
My favorite family cooking traditions
Growing up, whether it was a holiday like Thanksgiving or Christmas or a just-for-fun gathering, parties centered around a big table of delicious food. Helping my mother menu plan, and then cook, for guests was always so much fun. Now I throw my own parties, and the main focus is great food! That's what life is about- being around the people you love, eating, drinking, and laughing.
My cooking triumphs
Recipe requests, no leftovers even though I cooked double as much as needed, and being asked to bring food to other people's parties are among my everyday triumphs. It feels great to have gotten to a point where I have some stellar recipes in my repertoire that I know will impress.
My cooking tragedies
I cook every day, so in addition to the regular recipes in my rotation, I try 2-3 new recipes each week. "Tragedy" might be too strong a word, but I'm disappointed when something doesn't turn out the way I'd hoped, especially since I take care to select recipes that look promising or feature our favorite ingredients.

Pesto Cheesy Chicken Rolls
I love dishes that look and taste like something you'd eat at a restaurant. This is one of those, yet the preparation wasn't too hard. I seasoned the breasts with salt and pepper before adding the basil (my own recipe) and mozzarella, but I followed the recipe otherwise. In my oven, these were done in just over 40 minutes. I'll keep this recipe on hand for the next time I'd like to impress company!

Risotto with Truffle and Parmesan
This was sinfully delicious, and reminded me of a risotto I enjoyed on my honeymoon in Venice. There's just nothing like a decadent, parmesan risotto! The aroma coming from the pan as it's cooking is irresistible, but going the "low and slow" route really pays off with this one. My only change for next time would be cutting the truffle oil in half, I thought it was too strong and would've preferred to taste all the ingredients equally. Thanks so much for sharing, every time I make this it's met with rave reviews!

Spicy Italian Pork Cutlets
Five stars from me based on the ease it took cooking these, and five stars from hubby based on taste (I don't really eat meat). I loved that these weren't breaded, and the aroma as I was preparing them was phenomenal! I eye-balled the wine and chicken broth, and upped the red pepper flakes to 1/2 tsp for my spice-a-holic hubby, but otherwise followed the recipe as written. Served with yummy roasted potatoes also on this site, and salad. Will definitely make again! (Hubby said hopefully soon :)
