Mall Pretzels

Reviewed: Feb. 5, 2014
Made these for the Super Bowl and they were awesome! I am actually not a fan of these from the mall or sporting events but homemade definitely a fan! The only down side is we made them the day before and they were much better right out of the oven.

White Chili III

It was a great use of leftover Thanksgiving turkey. Needed more spice for me so I added a dash or 2 or 3 of cayenne pepper and extra hot sauce. Overall a tasty winter dish.

Blueberry Zucchini Bread

Made this with frozen blueberries that I had on hand and it turned out great. Nice combination blueberries and zucchini, would've never mixed the two. Thanks for the recipe, can't wait to make it again.

Very sweet may reduce the sugar next time but it definitely cured the sweet tooth, even if only temporarily.

Chef John's Sausage & Shrimp Jambalaya

Reviewed: Aug. 22, 2013
Just FYI: I didn't follow the recipe so much as I used it for guidance and used what I had on hand and it turned out great. I had some Greek Style Sausages that had feta and spinach in them. I took off the casings and cooked it then added in onion and green pepper and celery. Be sure and use Hot Hungarian Paprika for flavor. I never knew there was a difference until I splurged and bought it wow what an improvement! The other bulk bottle I had for years from the Big Box Store, in the trash, yuck! Also to speed things up I used some leftover brown rice I had in the fridge, heated it up with the stewed tomatoes and threw in the sausage mixture and added Worcestershire and a few shakes of Cholula Hot Suace yumm. Dished up my young boys who don't care for shrimp then threw in some de-veined cooked shrimp and the rest of us dug in. Looking forward to trying it again and follow the recipe a little closer when I have more time. But don't hesitate to try this and ad-lib as you need to!

Creamy Tomato Vodka Sauce

Reviewed: Feb. 26, 2013
Made this tonight and didn't have crushed red pepper but used black pepper instead. This was another wonderful recipe. But NOTE the vodka pepper mix is supposed to sit for 1 HOUR. This is not mentioned in the prep time so FYI start with this first so you can let it sit. We obviously didn't let it sit more than about 15 minutes and only had black pepper in it anyway. We also had cheap McCormick vodka would love to try with Grey Goose or another better vodka next time around. I was a bit worried about the amount of vodka but it was not overwhelming in the sauce by any means. Loved it and had plenty leftover as there was only the two of us for dinner, froze the rest for next time.

Quinoa Black Bean Burgers

Reviewed: Jul. 9, 2012
Great recipe, no more store bought garden burgers for my family! I used oatmeal as well and put it through the Vitamix first. Great texture and nutritious. Will add more garlic next time. I also did the baking method on 4oo for 30 minutes and got crunchy burgers.

Multigrain Pancakes

Reviewed: Jun. 3, 2012
I read through the first six or so reviews and followed the recommendations of decreasing the baking powder to 1/2 teaspoon as well as increased the ww flour to 1/2 cup and eliminated the cornmeal. Also, used regular white sugar 2 tsp., vanilla nonfat yogurt instead of plain. More skim milk and no water plus the whole 2 eggs. Lastly I added 2 tablespoons of Flaxseed to the dry ingredients. Very healthy and tasty recipe. Didn't make near enough and will try doubling batch next time.

Restaurant-Style Zuppa Toscana

Reviewed: Nov. 3, 2011
This is my favorite OG soup and now to have it at home is great! I made a huge batch and used canned chicken broth (5 cans), 2 bunches of kale no stems, and left over turkey bacon. Now to see if the the picky eaters will enjoy it, I sampled it and yummm!!! Yep the picky eaters eat it up! my 9 year old has requested we add it to our Christmas menu. He said it was the best meal he ever ate. My husband even enjoyed and my 11 year old ate the kale and didn't complain, very uncharacteristic of him.
