Easy OREO Truffles

These were easy and very good but extremely rich. I have a major sweet tooth and could barely finish one of these. I made them as a Christmas gift for the employees of my local post office and they disappeared fast. One change I would make- 9 cookies for the crumb topping is way too much. I had lots left over and ended up mixing with leftover cream cheese and making about 8 more truffles. I would only use maybe 4 cookies for the crumb topping. All in all a good recipe!

Cowboy Oatmeal Cookies

I made these exactly as directed with no changes and they were delicious. These disappeared in a hurry! They were the perfect blend of soft middle and crispy edges. I did use butter instead of margarine, since I never buy it. I didn't add extra oats or anything else.

Toasted Pumpkin Seeds with Sugar and Spice

Delicious! I made a batch of these and a batch of salty/spicy ones for a party and they went fast. I didn't have pumpkin pie spice, but you can make your own with other spices you probably already have. To make 1 tsp pie spice, combine 1/2 tsp cinnamon, 1/4 tsp ginger, and 1/8 tsp each of cloves and nutmeg. I doubled this recipe to use it all.

Sopapilla Cheesecake Dessert

This was delicious and so easy! I reduced the butter by almost half and didn't miss it. I also used reduced fat cream cheese. All of the ladies at my Cinco de Mayo party asked for the recipe. It was a huge hit! In the future I'll be making a half recipe with one can of crescent roll dough and 2 blocks of cream cheese in an 8x8 pan so I don't end up with so many tempting leftovers.

Fajita Marinade I

This is my new go-to recipe for fajitas. I let it sit overnight and even the toughest cut of skirt steak is really tender. I threw a Cinco de Mayo party and the fajitas I made with this marinade disappeared so fast!

The Best Red Enchilada Sauce

I've been looking for a good enchilada sauce recipe ever since I moved from Texas to Germany 3 years ago, and this is it. Thanks, Christine! I used flour tortillas, since corn tortillas are impossible to find here, and used a mixture of Monterey jack and mild cheddar. Before rolling, I dipped each tortilla in the sauce on both sides, and drizzled more sauce and cheese on top after filling. They tasted just like the cheese enchiladas at my favorite Mexican place back home. I'll never buy canned enchilada sauce again! This was delicious and SO easy.

Beer Butt Rosemary Chicken

So easy and delicious! I recommend adding more potatoes, they were the best potatoes I've had. I make this on a regular basis now, it's cheap, easy, and so good! The only downside is that it's hard to wait for the chicken to be done, it smells so good all through the house.

Calamari

Delicious! I added a good shake of cayenne pepper to try to make it like the restaurant where I used to work (not spicy but with a little extra something.) It came out great, light and crispy and not greasy at all. Next time I will cut down a little on the salt as I found it a little too salty, but my husband thought it was great as is.

General Tsao's Chicken

Delicious! I added more garlic and ginger (about 1 TB each) and only used 2 TB corn starch in the sauce and it was perfect. (I've made several chinese dishes with sauce this consistency before and already knew 1/2 cup waaaaayyyy too much corn starch.) I started by cutting out 4 TB of the sugar and tasting the sauce, but I thought it needed the entire amount so I added it back in. Like some reviewers, I wasn't completely in love with the cooked soy sauce/cornstarch flavor in the chicken. Next time I will just use regular tempura batter (also from this website) but the sauce was exactly what I was looking for. My husband and I relocated to Germany for his job and miss good ol' American Chinese food, since the German idea of Chinese food is quite different. This reminded me of our favorite Chinese place back in Houston. Thanks Shaun. We'll definitely make this sauce again with regular tempura chicken. It's a keeper!

Blondies I

I made up and posted this this recipe when I was about 12. (Can you tell I was a chubby 12 year old?) I did not have a good grasp of the fundamentals of baking and was just playing around. I definitely agree now that the amount of butter/shortening is WAY too much and the white chocolate chips should probably be cut in half or at least reduced somewhat. I'm now 25 and would make many changes to this recipe before trying it again. I just wanted to warn those reading it that this recipe was made up by a child and not a expert baker and you might want to make significant changes before trying it. I'm glad some people liked it as is. I still very much like the basic idea of the cookie having white chips, macadamia nuts, and coconut, but you will probably want to play with the amounts of butter and shortening or add more flour and another egg or something to make it better.

These were fantastic! It doesn't need quite all the milk, though. I followed the recipe exactly and had to add nearly half a cup more flour to even it out, but they were great and SUPER fluffy. I didn't think they had too much of a baking powder taste at all. I got 8 biscuits out of this recipe and they were still huge.

Peach Cake Dessert

I was very happy with this recipe. It came out just like the peach cobbler at Black Eyed Pea restaurants. The topping is definitely more of a cake than a pie crust, so if you prefer pie crust style cobbler this isn't for you, but everyone who had some loved it. I sprinkled a little cinnamon and sugar on top before baking. Delicious plain or with ice cream!

Artichoke & Spinach Dip Restaurant Style

Delicious! I might add a touch more garlic next time but my friends went nuts over this. I served it in a hollowed out loaf of King's Hawaiian bread (used the insides for bread pudding and french toast- yum!) and it looked really pretty. This was great with flour tortilla chips.

Best Brownies

I usually use Duncan Hines mix because homemade brownies have never turned out as gooey for me. I made these because a friend was over and we wanted brownies but didn't want to go to the store. I will never make a mix again! These were SOOOO good. Mine didn't turn out cakey at all. They were dense and gooey and delicious. I added about a half cup of chopped up Dove chocolates and it made them extra chocolatey. This is my new regular brownie recipe!

Kheer (Rice Pudding)

Soooo good! At the suggestion of other reviewers, I added a little vanilla and cinnamon and a tiny tiny dash of almond extract. It really complemented the flavors. I will definitely be making this again. We had it with coconut curry chicken and naan from this website and everything was fantastic and went well together.

The Best Chicken Fried Steak

Excellent! I made this for some Canadian friends who had never had it before and everyone loved it. The coating was much better than other recipes I've tried. I don't like Tabasco sauce but you can't taste it. It just complemented the other flavors in the coating. It stayed on the meat and looked beautiful, and although I'm usually a gravy dunce the gravy came out really well too. I wish this were a health food and I could justify eating it more often!

Delicious! I made this for a girls night with an Indian menu. It's snowing out and I didn't want to grill out, so I cooked it on an electric griddle and it came out great. I would definitely recommend using the garlic. It had a very good flavor and soft but slightly chewy texture. We served this with coconut curry chicken, hummus and veggies, and an Indian coconut rice pudding kind of thing. Not difficult to make either, but a bit time consuming.

Broccoli Beef I

I've never had much luck getting the sauce to come out right for beef and broccoli before but this recipe was perfect! I doubled the garlic and used 1/2 tsp powdered ginger since I didn't have fresh. I made the full sauce recipe with half the broccoli and beef, since my husband is in Iraq and I'm cooking for one these days. The extra sauce was great for dipping with egg rolls and over rice. I used sirloin steak instead of round steak since that's what I had on hand, and cut it very thin. I'll definitely be making this one again, over ad over again! I live in Germany where good Chinese food is not easy to come by and with the above mentioned changes, this tasted just like I remember getting at Pei Wei but with a fraction of the fat! Thanks!

Anna's Chocolate Chip Cookies

This is by far the best chocolate chip cookie recipe I've ever tried. The only change I made was to use 2 tsp of vanilla. Perfect! I had four other recipes for chocolate chip cookies in my recipe binder, and after I made these I threw them all away. This is my new go-to cookie recipe!
