Mock Champagne

Reviewed: Jan. 15, 2008
I used this recipe at my wedding and it turned out great! We tried a few different variations in smaller quantities to give it a little more flavor that everyone would enjoy(adding pineapple juice, using raspberry water, and adding almond extract which was a close second) but we ended up using strawberry carbonated water instead of plain and turned out perfect, not too sweet and just right.

Tropical Turkey Meat Loaf

Reviewed: Jan. 15, 2008
I was quite surprised by how this recipe turned out, it was delicous. My husband commented that it tasted almost like egg roll filling, but in a good way. I substituted bread crumbs with crackers, and since it's just the two of us, cut the recipe in half and baked in a muffin pan for mini-meatloafs. Great recipe!

Baked Egg Rolls

Reviewed: Feb. 20, 2008
I thought this recipe was pretty good as is and love that they're baked. I've tried it a few different ways with good results since, my husbands favorite so far is a southwest egg roll version with diced tomatos, corn, black beans, spinach, chicken, cheese & cilantro. Thanks for a great idea!

Summer Lasagna

Reviewed: Jun. 11, 2008
this recipe was great! i used skim ricotta in place of cottage cheese and mixed in some garlic & instead of two layers of zucchini, i compromised with my husband and added a middle layer of whole wheat lasagna noodles which soaked up the excess liquid. a little extra garlic flavor and this one is a keeper!

German Apple Pancake

Reviewed: Jan. 28, 2008
just awesome! my husband and i made this for a sunday morning breakfast to get out of the chocolate chip waffle routine, and these were amazing. some other recipes for this use too much egg (in my opinion) but this was just right! i added a little extra vanilla and cinnamon to the batter and it was delicious! thanks!

Chicken Curry I

Reviewed: Jan. 24, 2008
I was excited to try the recipe, but it didn't turn out as well as I had hoped. It was still good, but needed some body to it...I may thicken it up next time as some others have suggested, or may add coconut milk and a little more spice.

Butterscotch Cake I

Reviewed: Apr. 8, 2008
i was skeptical when i mixed the cake (the batter was extremely thick) and very skeptical when i pulled it out of the oven (it's not a pretty cake, at least mine wasn't), but after I served it for my mother in laws birthday and got rave reviews i'm a fan. the texture is extremely moist but not crumbly and it tasted great. i left off the carmelized sugar and added butterscotch & dark chocolate chips for a contrast, and iced it with a light whipped topping

I love pickled red beets, but not with onions. Otherwise I'd give it five stars :)

Kickin' London Broil with Bleu Cheese Butter

Reviewed: Feb. 5, 2008
This was so good. I had never cooked a london broil before and was somewhat skeptical after some of the other reviews said it was a tough cut of meat, but it turned out excellent. I followed the recipe except I used spray olive oil on the meat and let it sit for a little while as another reviewer suggested, and broiled it instead of grilling since it started raining when I got home. My only reccommendation would be to add a little liquid to let it marinade in next time. I will probably let it marinate in some red wine and add the seasonings. Oh, and the bleu cheese butter is amazing :) Definetly a keeper :)
