Grandma's Green Bean Casserole

This is our new green bean casserole! The only thing I changed was to use French fried onions instead of the crackers on top. I increased the recipe to make 15 servings, but instead of adding more sour cream I used a can of cream of mushroom soup. Delish!

Chilled Strawberry Angel Food Dessert

Very good and easy to make. I also mixed the sour cream with the pasta before putting it in a 9x13 pan. Went over really well for our Mother's Day carry-in at Mom's.

Baked Teriyaki Chicken

We LOVED this. I changed the sauce just a little because I had some leftover from a dish I made the day before. So mine had some honey and Worcestershire and brown sugar in it. But even my picky son ate it.

Cajun Spiced Pork Chops

We liked this but I only gave it four stars because I thought it was a little too spicy. But I generally don't like things really spicy either. I cut the boneless pork chops into small pieces and tossed them in a bowl with the spice mixture. I ended up turning it into a sweet and sour pork dish. I'll make it again but a little more mild.

Fluffy Pancakes

Sorta Salisbury Steak

We all really liked this. I added spices to the flour before I dredged the steaks. And like other reviewers, I used beefy onion soup mix and brown gravy mix with about 2 cups of water. The steaks were fork-tender and the gravy was already made!

Sausage Potato Bake

Good basic supper recipe. I didn't have vegetable soup so I added a can of corn and a can of green beans, both drained. I also used dry onion soup mix for flavor with a little water.

Strawberry Oatmeal Bars

I made these according to the recipe, except using Splenda Brown Sugar Blend for the sugar and sugar-free preserves. I appreciated the fact that they were thin so that I am getting fewer calories! I will try them again, maybe with less butter this time. A keeper! Update: I made these with a low sugar cherry pie filling. It came out just like cobbler! I'm always thrilled when I can adapt a usually high-sugar dessert into something my husband and I can eat.

Prairie Meat Loaf

I'm always on the lookout for different ways to make old favorites and I really liked this. But beware...this makes a HUGE meatloaf. I didn't read ahead to see how much meat it called for until I had already started. But we can use the leftovers for lunches. I only had about 1 1/2 cups of cheese and that seemed to be enough. I didn't put any on top. I might cut back on the celery next time as I found it a bit too strong but all in all, this tasted great!

Cream of Broccoli Soup I

This was my first attempt at cream of broccoli soup. It was delish! After reading other recipes on allrecipes.com, I decided to use 3 cans of chicken broth in place of the water and bouillon. I also added some leftover cauliflower and almost doubled the broccoli. I added more cheese too. A definite keeper!

Easy Ham and Cheese Appetizer Sandwiches

Very good! We made these for family on Christmas Eve. We made them about an hour before everyone arrived, then kept them warm in a roaster. These were a huge hit with everyone! Next time we are going to try different meats and cheeses and play around a little with the flavors in the butter.

Pumpkin Cream Cheese Muffins

We loved these! The only thing I did different is scale it back to 12 muffins and use Splenda Blend in the muffin batter and regular Splenda in the topping. My husband and I are bariatric patients and I regularly substitute Splenda products for sugar in my recipes. Also, make sure you make a well in your muffin batter before you put the cream cheese filling in. Excellent!

Oatmeal Blueberry Muffins

I really liked these, but I made some changes. I used powdered milk mixed with water to make one cup because we were short on milk. I used applesauce instead of the oil. I think this combination made them more moist so I had to double the flour. I used 1 cup whole wheat flour and 1 cup all purpose flour. I used 1/2 Splenda Brown Sugar blend instead of the white sugar. I added a bit of vanilla and cinnamon like others suggested. I also cut the baking powder down to 2tsp. I baked them for 20mins at 375 and they came out great! They are not your usual bakery type muffins but a more healthy version. My husband and I are both bariatric patients and these are "sweets" that we can actually eat without having a reaction to the sugar.

Simple BBQ Ribs

Very good. I followed some of the other reviewers' advice and added some spices to the water: onions, chili powder, a little bit of hot sauce, liquid smoke. I boiled them for about 45 mins and then into the oven for 90 mins. Excellent!

Apple Crisp Cups

These are great! I subsituted 1Tbsp Splenda for the sugar in the apples. And I used Splenda Brown Sugar Blend for the brown sugar in the crust. Mine didn't crisp up but maybe they needed to be baked a little longer. I think next time I will just press the oatmeal mixture into a pan. I've been looking for an apple crisp recipe that I could adapt for us Bariatric patients, and I think I found it! Thanks!

Mom's Zucchini Bread

This is very good. I've made a couple batches with Splenda Blend and it comes out good too. When using Splenda, or Splenda Blend, cut the quantity of sugar in half.
