Me and my Shadow

About this Cook
I am 45 yrs old and have been cooking since I was young. With 5 kids in the house and a working Mom, we took turns getting supper on the table before Mom came home. Living out in the country in Indiana, when we were bored, we baked. In Feb 2006 I had Bariatric surgery. I turn to allrecipes.com for new ways to cook my old favorites.
My favorite things to cook
I LOVE using my crock pot! I work nights and sleep during the day so using the crock pot allows me to have dinner on the table at a reasonable time without sacrficing my sleep! I look for great tasting-low carb and low sugar recipes. After Bariatric surgery, I cannot tolerate much sugar in a dish. I'm learning there are lots of other flavors out there besides "sweet".
My favorite family cooking traditions
Now as adults, we plan themed holiday meals. One Christmas was late morning and we all brought brunch dishes. One year it was pizza and we all brought different pizzas to share. Another year was loaded potatoes and salads.
My cooking triumphs
Not sure if I have any triumphs. Unless it's when my kids light up when I yell "FOOD!"
My cooking tragedies
The first Thankgiving after my divorce. Dinner was at my house. The turkey didn't get done. The cornbread didn't cook. The rolls didn't rise, and the cat dragged in a dead sparrow and ran through the house. We found her in my daughter's bedroom in the middle of a pile of feathers with a very triumphant look on her face! None of the family has ever topped that holiday meal!

French Toast Casserole
I make this all the time. I cut back on the white sugar and add some Truvia. Sometimes I add blueberries too. The family loves it! It only makes an 8x8 inch pan so I double it and use a 9x13 cake pan.

Pumpkin Crunch Cake
I made this for Thanksgiving this year and it was a hit! The only changes I made based on other reviews, were to use 1/2C white sugar and 1/2C brown sugar in place of the 1 1/2C white sugar the recipe called for. I also used a sugar-free yellow cake mix. I patted the cake mix down until the pumpkin mixture ALMOST started to peak through. I sprinkled pecan pieces over that and then covered the whole thing with the melted butter. The trick is to make sure the cake mix is patted down really well and the whole thing is covered completely with the melted butter. I covered with foil for 55 minutes, then removed the foil and baked for another 15 minutes, checking for doneness every five minutes or so. My husband and I are both bariatric patients so I am always looking for recipes that I can make with lower sugar. This one is a keeper!

Bread Machine Rolls
This is my "go to" recipe for rolls. Sometimes I use the egg wash, sometimes not. There isn't a better way to make homemade rolls!
