Shortbread Cookies II

Great recipe for "pure" shortbread. I used lemon extract instead of vanilla and added the grated zest from one lemon. I rolled them out and used cookie cutters. Perfect Christmas cookies!

Warm Orange Sauce

Dijon-Tarragon Cream Chicken

So easy to make but tastes like it took forever. I've served this four times for dinner parties and it's always a hit. The sauce is sooooo good. Fresh tarragon is key as is a really good Dijon mustard.

Pomegranate Feta Salad with Lemon Dijon Vinaigrette

I love this recipe. I'm always asked for the recipe for the dressing. I go a little heavier on the mustard just for my own preference/taste. Great combination of flavors with the dressing, feta, pomegranate. Yum.

Best Stovetop BBQ Ribs

So good and so easy. Prepared it exactly as written with excellent results. Included the optional onion and it helped keep everything moist and flavorful. I probably simmered a bit longer than 45 minutes while making other menu items, but not too much longer. Will definitely make this one again.

Pumpkin Apple Streusel Muffins

Great recipe! Because I had an acorn squash to use up I baked it then made puree with it and used that instead of the pumpkin. Left all other ingredients the same, then baked in a bundt pan instead of muffins. (55 mins at 350.) Perfection and rave reviews. Will make again soon I'm sure.

Winter Vegetable Hash

Fantastic! Used chard instead of kale and dried sage in lieu of fresh. All other ingredients the same and it was absolutely delicious. Used the leftovers in an egg scramble. Yum!

Udon Peanut Butter Noodles

So easy yet so delicious. I added a bit more garlic, ginger and peanut butter than called for just for my own taste. Also diced up a carrot and added it to the mix. Made enough to take leftovers in for lunch. Coworkers will be jealous. So good! Will definitely make again.

Magic Mango Bread

Mixed all ingredients exactly as written in recipe; baked in buttered bundt pan. Came out perfectly. Delicious, moist. Brought it into work and it was devoured to high praise. Wouldn't change a thing.

Easy Batter Fruit Cobbler

Easy and delicious. A great basic cobbler recipe that let the fresh blueberries I picked take center stage. Accented nicely by ice cream on top. Everyone raved about it.

Irish Soda Bread

I made this to take to work for St. Patrick's Day. It was excellent. I used about half dried currants and half raisins instead of all raisins--but no other changes. It was devoured almost immediately, and one coworker said, "I could eat a whole loaf of this by myself!" I found it was perfectly baked at 60 minutes. Will definitely make this again. Also: baked it in my cast iron skillet--perfect!

Quick Yeast Rolls

So very easy yet soooo delicious. I can't believe how good these are for how simple they are to make. Yes, the dough is sticky. It's supposed to be. Don't try to knead it! I used two spoons to scrape the dough into the muffin tins. No problem!

I was looking for a basic jam thumbprint recipe to compliment my homemade blueberry jam, and this is it! So easy, yet so classic and delicious. Also, love that this is a Swedish recipe as I'm making these for a coworker who is Swedish. Funny coincidence. Great, easy, delicious recipe. Can't go wrong.

Kentucky Biscuits

Quickest biscuits I've ever made. Came out perfectly. Moist inside, nice crunch outside. I mixed together dry ingredients with a whisk, grated the stick of butter right into the bowl with the dry mixture, lightly coated the butter shreds with the flour mix and then added the buttermilk. Barely moistened, then patted into a rectangle by hand on parchment paper on the cookie sheet. Gave 12 perfect square biscuits--but I do miss the round shape. Next time I'll try rolling and cutting. Very good taste!

Shortbread Supreme

By far the best shortbread I've ever made or eaten. I am already imagining the possibilities for add-ins such as orange or lemon zest, lavender, cinnamon...but they are fantastic as is. I made these tonight and cut them out with a salmon shaped cookie cutter and dipped the "tails" in melted chocolate. I'm bringing them to a work Christmas potluck tomorrow and I know they'll disappear fast. I softened the butter just slightly enough for it to easily cream with the sugar, but not so soft that the dough got too messy. I made them a little on the thin side and baked for 11 minutes. These are delicious!

Easy Pumpkin Muffins

Easy and delicious. I just made two and a half dozen of these to take to work tomorrow and am sure going to hate to admit how simple they were to make when I'm asked for the recipe. Next time I think I'll make a streusel topping, but having just taste tested one I can say they are excellent just the way they are.

Easy and delicious. Some of the best crepes I've ever made. It's easy to halve or double, and easy to alter to your liking, i.e. less sugar for savory crepes, addition of vanilla for more dessert like, etc.
