Coleslaw
I was looking for a good alternative to my creamy slaw that I usually make when I came across this recipe. I used a 16oz package of slaw mix, cut the sugar down to 2 tbls, and used just shy of 1/4 C olive oil. I also added some sea salt and cracked pepper to my taste, 1Tbls honey, and 1 tsp celery seed. This is a great base to "play with" The first taste was so good, I can't wait to taste it after it's been sitting overnight!

Double Chocolate Chunk Cookies
I LOVE this recipe! I make the cookies exactly as directed only I add 1C of flaked coconut. (I definately flatten)I bake at 325 for 11 minutes. When cookies are cooled, I spread the top w/ caramel ice cream topping then dip them into toasted coconut! I can't even tell you how many dozens of these I've sent to the soldiers oversees!

Polly Welby's Excellent Chocolate Mousse
I made this mousse for a party I recently had and everyone loved it. I made some extra whipped topping and used an 8oz Hershey's Symphony plain chocolate bar. Melted it in microwave as the other users suggested and you absolutely have to fold the cream into the chocolate to get it smooth. I mixed just a bit of sugar and cinnamon into leftover cream that I had and put a glob on top of mousse. Chilled for 15 minutes, then drizzled with a tad bit of hot fudge right before serving. Absolutely wonderful!
