Halloween Brain Dip
I cheated and used store bought guacamole, but the cauliflower "brain" was a huge hit! I served it at a Friday the 13th party and everyone got a huge kick out of it. Such a clever idea. Thanks!

Whipped Shortbread Cookies
Despite what some reviewers have said, you can, in fact, overwhip these. I followed one reviewer who said to whip for 5 minutes after each ingredient and those cookies practically turned to liquid when they baked. I've never seen a cookie do what that batch did. I do, however, beat the butter for a solid 5 minutes alone, then add the remaining dry ingredients slowly. Beating time ends up a total of 10 minutes, as the original recipe states. These cookies melt in your mouth, and they are VERY DELICATE, but they taste amazing.

Rich and Creamy Tomato Basil Soup
I wanted to put my new Vitamix to the test, so I didn't peel or seed the tomatoes. I used Romas because they were on sale at the Farmer's Market and doubled the recipe. After I blended (and the Vitamix passed with flying colours - no peeling or seeding needed) I found that the soup was a little lacking. I added 6 Tablespoons of sugar and this evened it out nicely. Everything else about the recipe was perfect. It definitely wowed some dinner guests.
