Mom's Best Peanut Brittle
I have had nothing but compliments on this recipe. I have tried it twice so far (and will be making it again). The first time I undercooked it and ended up with toffee which had lovely flavor and was entirely edible. The second time I ended up with perfect peanut brittle. I would make two observations: 1. this is MUCH easier with a candy thermometer (unless you have lots of candy-making experience) 2. Even though I used raw peanuts and stirred constantly they still wanted to burn (which resulted in undercooking & hence the toffee). Make sure you don't use too big of a saucepan (especially if you have a gas stove!) as I think that contributed to burning the peanuts

Warm Flourless Chocolate Cake with Caramel Sauce
I was traveling with this recipe so I couldn't have it warm and there were not facilities to make the caramel sauce so I cannot speak to that aspect. Given these challenges I wanted the cake to have a little something special so I substituted 1/4 cup of Mint Chocolate Baileys for 1/4 cup of the butter. This change imparted a nice flavor of the minty Baileys without being overpowering and maintained the texture and integrity of the recipe. I will make this again
