Texas Black Bean Soup

Reviewed: Dec. 13, 2007
I made this recipe due to the rave reviews, and was very disappointed. I didn't change anything in the recipe, and it turned out more like I threw beans in water and added some cheap salsa. My husband wouldn't even touch it. I saved it as a filler for a future batch of chili. It seemed like it was missing something (or a lot of things), and I don't understand why it got such rave reviews. ???

Cranberry and Cilantro Quinoa Salad

Reviewed: Dec. 10, 2014
This is a review with all the ORIGINAL ingredients, not an edited version of the recipe. Not bad, but not overly impressed as-is. It is delicious, however, topped with avocado. In the future I will try this with coconut flakes. I have to agree with others in that it seems like it's missing something, but I do like the fact that this is packed with nutrients. I let mine sit overnight for best flavor and it was just so-so. Other than toasting the almonds in 1 tbsp olive oil, I didn't change the ingredients, but I did cut the cilantro and onion in half after reading many reviews. I also cut the onion very thin so it wasn't overpowering. For those cilantro haters out there, you can always use oregano in its place. I make my quinoa in a rice cooker and use only water, not stock or broth, as IMO, that tends to make it more dry. For anyone new to quinoa, I recommend against purchasing it in cardboard packaging - opt for airtight packaging instead. I've read many complaints about quinoa taking on the taste of the cardboard. Always, always, always rinse quinoa before cooking. I rinse quinoa in a stainless 5 cup sifter until bubbles are gone and water runs clear. I highly recommend trying Mojito Cuban Quinoa Salad. Absolutely Delicious!!

Boilermaker Tailgate Chili

Reviewed: Dec. 29, 2007
I am going to give this four stars only because it's a little too spicy for my taste, BUT my husband and in-laws LOVED it (they love food on the spicy side), and it was a huge hit when family came in to town. Hubby said it was the BEST chili he has ever tried. I would make it next time and separate into two batches (omitting the chili peppers, tabasco sauce and cayenne pepper in my portion). Otherwise, we added extra ground beef (3 lbs instead of 2) and 1 lb extra italian sausage. Great recipe.

Gypsy Soup

Reviewed: Dec. 13, 2007
I was really happy with this one. My husband didn't care for it too much simply because he didn't like the sweetness of it - he suggested I try it next time with regular potatoes instead of sweet potatoes (Hmmmmmm). It had a lot of flavor. I doubled the recipe like others suggested, and I also added a pint of half & half during the last 15 minute simmer to make it a cream-based soup, and I increased the chicken stock by 2 cups. I also substituted soy sauce for the tamari and curry powder for the turmeric as others did on this forum. Great meal for a cold or rainy day, easy to make and healthy too.
