Mom's Potato Latkes

Super yummy delicious, and oh so easy. I chop the onion then shred up the potato on top of it all in the food processor. Then, just dump it out into a bowl and add the rest. I use matzoh ball mix instead of plain flour.

Cabbage Rolls II

This is a very good basic recipe. I only tweaked it a little to make it a bit more flavorful. I added 2t of Worcestershire and 2T of Parmesano Reggiano to the meat mixture. I also simply baked it in the oven, covered with foil, at 375 for 20 minutes.

Sweet Potato Patties

These patties were great! I made them exactly as the recipe says. I changed the sauce only because we accidentally bought vanilla yogurt and decided adding pineapple juice would be much too sweet. BUT, we happened to have a jar of pineapple salsa (just pineapple and spice, no tomato) in the fridge. That handled the fruity and the spicy, while the yogurt contributed creamy and sweet. Awesome all around!

Quick Chicken Stew

I could have probably left this recipe alone as it was (except for needing some extra liquid because the tomatoes I used didn't have very much juice) and it would have been fine, but I can't seem to bring myself to do that! ;-) Here's what I did: I added chicken broth until I liked the juiciness. I added 1 tsp. of sugar, put in 1 tsp. of salt and 1 extra Tbsp. of butter. I would have added Parmesiano Reggiano instead (and will next time) but I didn't have any, so I added some asiago cheese. Also, I'm a pretty proficient cook, but I don't see how this gets on the table in half an hour unless you're a speed demon or you pre-cut the vegetables and don't cook them very much. This took closer to an hour to get to the table. My boyfriend and I both really enjoyed this with a crusty baguette and I had leftovers with some spiral noodles.
