Tender Pork Spare Ribs

these were just "okay", granted i did not follow the recipe exactly. The meat just fell off the bone and maintained it's juiciness fairly well, but considering the effort to give it flavor, that was the area it seemed to lack. Granted, i didn't have the Fajita seasoning (or brown sugar) so had to improvise and only marinated 2hrs vs overnight. Will try again ... the concept of the foil wrap and slow cook works well ... just need to tweak the flavoring. Also, i'm not sure what I did wrong, but I didn't see much use in simmering the drippings. It never thickened for me & seemed an unecessary step.

French Onion Soup Gratinee

Great French onion soup recipe! I tried a diff recipe a few yrs ago and it turned out just "ok". Not good enough to want to make again. Recently found this recipe and decided to give it another try. Followed it pretty much as written, except substituted 2Tbsp of evoo for 2 of the 4Tbsps of butter. Not sure it really makes a diff at the end of the day, but I feel better about less butter. ;). Chose the cheaper cheeses (Swiss & Mozz combo) and think they worked just fine. Not sure if the recipe calls for too much balsamic vinegar and/or red wine though. Seemed a little over powering ... Will def cut back on both next time even though underestimated the measurements to begin with. Will make a gain for sure! THX for sharing!

Simple Whole Roasted Chicken

Excellent as others have said ... I was surprised based on the seasoning though aware of cinnamons way of enhancing flavor. Minimal changes i made include ... Doubling the seasoning mixture (less than double sugar - don't like to use in anything except dessert!), placed pads of butter under skin, added onion to cavity along w/whole vs crushed garlic, and cooked breast side up. The bird had a pop up timer and I have a hard enough time as it is knowing when it's done ... Did not want the timer to be ineffective being upside down & so close to the bottom of the pan. Still came out juicier than any other I've roasted and I believe it was quite well to almost well-over done!! So glad i tried this one & will do it again. Also added cut up fresh zucchini and yellow squash to the pan at the last 20 -30min ... They tasted DELICIOUS with the juices/seasoning. Did not anticipate that at all ... Again, glad I experimented with something new!

Banana Crumb Muffins

Excellent ... also subst. oil for the butter ... and as i do w/most recipes, used less sugar and mixed whole wheat and white flours. I added a handful of raisins as well.

Downeast Maine Pumpkin Bread

Very, very good! This specific recipe was featured on this website the other day as I was looking up a completely different recipe. It caught my eye so I had to try it. I did make the following variations: 1. instead of 1cup of oil, I used 1/2 cup [canola] oil and 1/2 cup unsweetened applesauce 2. I used 50% white flour and 50% whole wheat flour 3. I only used 2 cups of sugar (1 cup regular, 1 cup splenda). It is super moist; though maybe a little too spiced (for me) ... I will probably cut back a little on the cloves next time.
