Chunky Monkey Muffins

Didn't change a thing and they got eaten up by all at a game night. Bake them for the time in the recipe, even at high altitude. Soft is good, burned bottom is bad.

Brown Sugar Brownies

Can't put it in a 9x13 with the recipe as is but it's perfect in a 9x9. I make the recipe exactly, with the chocolate chips mixed in. Comes out perfect every time. Once I swapped the butter out for coconut oil and added a touch more flour to get the right consistency and it came out just as delicious!

Well, the flavor is really good but once you pour the coconut oil in the almond milk, it hardens. Maybe need a integrative almond milk should be room temperature even though I let it stand for 10 minutes waiting for the milk to curdle.

Dairy Free Chocolate Pudding

Very light, despite it'sleep chocolate color. I doubled the recipe for a party and it got rave reviews. Like people recommended, I changed the sugar to 1/3 cup (2/3 to double the recipe) and I used rice milk. At first it was frustrating because it didn't seem like the cocoa was going to mix, it just floated on top for forever. But eventually it incorporated and I cooked it until it seemed thick enough, cooled it the pan for bit and then finally transferred to a glass bowl to refrigerate. Everyone liked it! Light texture and great aftertaste.

Vegan Broccoli Soup

So in love! My whole family likes this, even those who don't care for broccoli. I soak my cashews for a little in the hot broth so it is very smooth when I process them in my little food processor.

Best Tuna Casserole

Just tried this recipe tonight. I love the recipes on this site that help you have a foundation to begin with and then you can make it your own. I like seasoning so I added seasoning: garlic powder, black pepper, ground coriander and small dose of cayenne pepper. I never, ever add as much onion as anyone suggests so I only added finely chopped, maybe the 1/4 cup. I also added 1/2 cup milk and 1/2 cup plain yogurt to combat the dryness that other reported. Very good and tasty. Four stars since I had to add moisture.

Hearty Morning Muffins

Love making them and freezing them, pulling them out as I need. These are delicious. Even my friends who don't like coconut loved them. I did substitute and added cranberries and flax meal...you can do whatever you want with these. Thanks for positing this lovely recipe!

Danny's Macaroni and Cheese

I was surprised that this turned out so good because I can never make something baked with mostly cheese without it being stringy and oily. I did what another reader said: while the pasta drains, put some milk and butter into the pot with the cheese and let it melt (added dried basil) and then add the tomatoes (I used Italian diced) and then put everything together to bake. My husband liked it and it turned out creamier than I expected. Not stringy and oily. Thanks for the simple recipe.

Mom's Stovetop Pork Ribs

I made this just the way it says to but I didn't cover the ribs all the way and it made more work for me, having to turn them frequently. So, make sure you cover them with water all the way. I used my largest, widest pan, not a pot and it helped reduce cooking time. This is my absolute favorite way to cook ribs now. I tried both bone-in and boneless and they both work great with this recipe. Gotta have cilantro and lime--makes the recipe great. Thank you for sharing the recipe!

Aunt Nancy's Grape Salad

I, too, have done a rendition of this salad but the recipe I've tried creams together 8oz cream cheese with 7oz jar of marshmellow cream. Then fold in the grapes...with slivered almonds, if you like.
