Chef John's Salmon

I made this for dinner last night. I typically don't like salmon but I ate almost all of my serving. It was great! Even my husband and daughter loved it.

Baghdad Beef Stew

I made 3 or 4 changes. I subbed ground beef for stew beef as that was what I had on hand, olive oil instead of vegetable out of habit, didn't have canned figs so I used fresh/dried, also didn't have red wine vinegar so I used apple cider vinegar. Overall, my family & I really enjoyed it. It was a little too sweet for my personal taste but that can be fixed pretty easily. I fully intend to make this again as it is well worth the time put in.

Creamy Saffron Shrimp with Gnocchi and Caramelized Onion

This was AMAZING! The only thing I did different was I forgot to pull out the shrimp to let it thaw so I had to cook it frozen. I ended up letting the resulting juices reduce with a bit of cooking Marsala wine. Future changes are a complete removal of the saffron as it does nothing in the dinner, adding more paprika, and double or tripling the entire recipe.

Pork Tenderloin alla Napoli

I'm not one for a ton of spices and flavors. This however, was a little less than I was expecting. For my family and I, the sauce was nowhere near enough.Instead of using green olives, I used Kalamata olives since that is what we all like. I do have plans on making this again in the future though. All in all, an excellent base to start with.

Peppered Shrimp Alfredo

This was a great recipe. The only reason I didn't give it 5 stars is because my husband and I are unsure as to how it got the name Peppered. Any way you go, it is still an amazing meal. Next time I might consider adding Crushed Red Pepper for a little bit of kick.

Venison-Bacon White Chili

My husband and I were both feeling under the weather when I made this and we both loved it! I did make some modifications. I used 7 crushed cloves of garlic since I had it, I eye-balled all the spices, used no salt at all, used turkey bacon and a small amount of cinnamon and nutmeg. I also added red cooking wine to the meat mixture. It smelled delicious and tasted amazing. My husband and I both agree that some kind of un-levened bread would go quite well with this. Cornbread might do in a pinch. I will make this again if given the chance.

Potato Pancakes

I LOVED this version. I did make some changes. Instead of grating I used the processor to chop the potatoes and onion together. That was it really. Hubby did like but said to ease up on the onion a little. Just as good the next day for a snack that I shared with my son. He really liked them. I had no problems with it being too floury or anything else.

Schnitzel

My husband and I really liked this. I did not expect it to be as tender as it was. I did not really like the cornmeal texture in the breading though. The only things I did different was to add garlic powder and paprika to the flour and cornmeal mixture. I also made a mushroom and onion gravy to go over it and served it all with buttered pasta. Overall an excellent recipe. I don't care if the name is possibly wrong.

German Beef Rouladen

My husband and I both loved this dish! The only change that I made was I used a full can of beef broth instead of half (making 4 servings)and an emergency substitution of flour for cornstarch which is 2 Tbs all purpose for 1 Tbs cornstarch. I will be making this again.
