Pepperoncini Beef

I topped the beef with one sliced green pepper and one sliced onion before pouring the pepperoncini over. It was tangy & just a little spicy - very good!

Great for a weekend vegetarian lunch. I used a fresh whole wheat pizza crust instead of the pitas. We thinly sliced a quarter of a small red onion and used up a few tablespoons of sliced black olives and placed on half the pizza & that side was really good too!

Tofu Turkey II

The flavor was very good. Next time I would drain the tofu for a while & try to squeeze out some of the liquid. It was very light, fluffy & a little too wet, almost like a ricotta cheese filling for lasagna. I found it difficult to prepare as a loaf and would probably just make a casserole with the stuffing on the bottom & tofu mixture on top. Delicious flavor though, I will make again for sure.

Moo Shu Pork

Very good flavor & versatile recipe. The first time I made this I added sliced shitake mushrooms while cooking the pork & sliced green onions with the slaw just to stretch it a little. The second time I made it I had shredded pork left over from the "Kalua Pig in a Slow Cooker" recipe from this site. I used that intstead of pork loin chops warming it up with the garlic & oil. It was great - we all prefered the texture of the shredded pork.

Kalua Pig in a Slow Cooker

This is a great way to use an inexpensive cut of meat! Once the roast is done, I shred the meat & pick through to remove any fat. Then I divide meat into 4 or 5 portions - keep one aside for dinner that night & freeze the rest in quart-size zipper bags. I use this as a sub for the pork in "Moo Shu Pork" & "Chilie Pork Tacos" from this site. Also great just by itself or mixed with BBQ sauce & served on rolls. You get at least 5 fast & easy meals for busy weeknights from one recipe!

Peanut Butter Chocolate Chip Cookies II

Very good taste & texture. They are very soft when you first take them out of the oven and almost impossible to move without breaking. The trick is to follow the instructions and let them cool on the cookie sheet for a few minutes before transferring to a wire rack. A thin metal spatula also helps to slide under the cookies. They firm up nicely as they cool. Recipe does not make a big batch.

Chilie Pork Tacos

Great recipe! Nice change from typical tacos. Made even easier with shredded left-over pork. Recipe makes a lot - dinner for 4 plus lunch the next day.

Vodka Slush

I have a similar recipe using whiskey, but I had Vodka on hand so I tried this. WOW! I used Orange/pineapple juice concentrate since I had some in the freezer. It was really great - perfect blend of sweet and tangy & a big kick from the vodka.

Crunchy Caramel Corn

We came home with a free refill of an XL bucket of popcorn from the movies last night. I've made caramel corn using a stove-top recipe and a candy thermometer, but this recipe was so easy. I made 4 batches, one right after the other and it took me less than half an hour. We loved the salty-sweet taste from using the movie theater popcorn & salted nuts. The only change I made was to use a can of salted deluxe mixed nuts I had on hand instead of the peanuts. A few tips... use pot holders, the glass bowls get hot... when you are microwaving the popcorn, stir every 30 seconds... finally, count on making at least a double batch, 6 cups sounds like a lot of popcorn, but it will be gone before you know it!

Chicken with Green Peppers in Black Bean Sauce

I was looking for a recipe for Jalapeno Chicken that we order at a local Chinese restaurant & this comes very close. I substituted 4 sliced jalapeno peppers for one of the green peppers & it was great. Thanks for the recipe - if you like spicy food try it with the jalapenos!

Sour Cream Chicken Enchiladas

Yum! I used corn tortillas (lightly fried), but otherwise followed the rest of the recipe. Just the right amount of spicy & lots of cilantro flavor - just as the intro states...if you don't like cilantro or spicy, adjust to your taste!

Memphis Rub

I was just going to search for "rib rub" or similar, until my husband mentioned the best ribs he ever had were in Memphis, so I searched for "Memphis Rub" instead. I'm so glad only one recipe came up since I didn't have time to check out a bunch, read reviews, etc. This rub was fantastic! I didn't have the MSG & I'm not sure what it could have added to the flavor. I can't wait to try it on other meats! So all I can say is, "Thank you, thank you very much!" for a little taste of Memphis.

Pepperoni Bread

I started with fresh pizza dough from my grocery store which makes this a quick & easy weeknight meal. I omitted the egg step(not needed), then added a thin layer of fresh baby spinach to sneak in some veggies & substituted some prosciutto for half of the pepperoni. I also drizzled with olive oil & sprinkled with more Italian seasoning & a little grated parmesan cheese. I served with marinara sauce to dip. Very good results!

Asparagus Frittata
