Eggnog Quick Bread

I made about 10 of these for people I work with. The only change I made was using Spiced Rum instead of Rum extract, because I did not have the rum extract. Waiting to hear from them, but I would definitely give it 4 stars, great Christmas morning with coffee.

Health Nut Blueberry Muffins

These muffins were wonderful. I used Flax oil instead of vegetable oil. I plan on making them for my mom, who is diabetic, with Brown Sugar Splenda.

Absolutely the Best Chocolate Chip Cookies

Took these cookies on a weekend to an inn with friends and everyone said they were fantastic. I used butter instead of butter flavored shortening and mixed semi-sweet and milk chocolate chips. Did not add nuts, but one person suggested that would be a nice touch.

Easy Cheese Ball II

So easy to make. I let the cream cheese sit out to warm up for easy mixing. Then I actually lined a glass pitcher/mixing bowl with plastic wrap and dumped the mixture into this; then closed the wrap around it to help form the ball (sometime I would refrigerate for an hour to firm up), this made it easier to handle when rolling in nuts. I used walnuts one time and pecans another. EVERYONE AT MULTIPLE PARTIES RAVED AND WANTED THE RECIPE.
