Absolutely Amazing Ahi

Used a mixed sashimi with yellow tail, ahi, and salmon. Recipe was delicious. Wrapped in seaweed and devoured almost all of it in one sitting.

Mexican Rice II

Delicious! I use brown rice instead of white and add an extra 1\2 cup of water as brown rice requires more water to cook. It also takes about 20 minutes longer. Well worth it for the health benefits. Enjoy !

Chicken Tikka Masala

One of the best things I've ever tasted. Omitted the salt from the marinade and reduced the black pepper to one teaspoon. For the sauce I used only a dash of salt. Served over whole wheat couscous with whole wheat pita bread. The sauce tasted ever better the next day.

Indian Turkey Burgers With Lime, Cucumbers, and Chutney

Delicious. I suggest adding a bit more cumin. I discovered that Major Grey chutney is a variety of chutney and not a brand. Only thing I changed was smearing plain yogurt on the pita and cooking the patty on a Foreman Grill.

Fresh Strawberry Pie I

Phenomenally delicious and easy pie. Substituted 4T flour for the cornstarch because we did not have any on hand. This made enough filling for 1 pie, not two.

Hugh's Dry Rub

Delicious! Reduced salt by 2 tablespoons and replaced cayenne pepper with red pepper flakes because that is what I had on hand. Rubbed on chicken and grilled on the George Foreman grill for 10 minutes.

Twelve Minute Pasta Toss

Simple, delicious, elegant meal. Used whole wheat pasta, cooked marinated chicken on the foreman grill, and used fresh basil in place of dried basil because I had it on hand. Highly recommended. Next time I will add a veggie, probably broccoli and maybe pine nuts.

Hot Breakfast Couscous

Delicious, flexible recipe. I used whole wheat couscous and walnuts and cranberries in place of the suggested dried fruits and nuts. Also, I prefer my hot cereal to have more liquid so I added more milk. Enjoy this fiber-ful breakfast, I did!!

Strawberry Bread

5 stars with these changes: Used whole wheat flour, reduced oil to 1\2 cup, reduced sugar to 1\2 cup, used walnuts instead of pecans (they are what I had on hand), added 1\8 cup brown sugar, added 2 teaspoons vanilla, and added 2 cups pureed strawberries. Cooked in a bundt pan for about 50 minutes, until tester came out clean. Cooked in a bundt pan and dusted with powdered sugar. Delicious, moist, and much healthier with the changes.
