Pakistani Spicy Chickpeas

Sauteed onion with a jalapeno pepper and 5 small cloves of garlic. Really delicious! Also, used ground cumin as I do not have cumin seeds.

Easy Garlic Broiled Chicken

Simple and delicious. Per another reviewer's advice I used 1\4 cup olive oil and 1\4 cup butter. (did not microwave the olive oil.) Also substituted dried cilantro for dried parsley because we did not have any on hand. Baked in oven at 450 and basted every 5-10 minutes until ready. Highly recommended !

Simple Carnitas

Ronaldo's Beef Carnitas

Used only two lbs. meat but kept spices the same. Substituted a fresh jalapeno for the diced variety. Mixed spices and garlic in 1 T olive oil and rubbed into meat. Cooked in 2 cups of beef broth to prevent meat from being dry. Eliminated the salt because broth has salt. Cooked in crock pot for 4 hours on low. Very tasty when served on corn tortillas with homemade salsa, avocado, and sour cream. Rated it a 4 because I had to make all the variations. With the changes its a 5 star recipe. Enjoy !

Good recipe, but great once I added turmeric, cayenne, and ground ginger. I also used almonds in place of the cashews because it is what I had on hand. i think cashews would have been better.

Quick Stuffed Tomatoes

Amazingly delicious with some changes: Sauteed 1\2 yellow onions with 3 garlic cloves and 1\4 cup of fresh parsley. Salted the pulp before added to cous cous mixture. Made half the tomatoes with mozarella and parmesan and the other half with feta cheese.

Cake Balls

5 stars for taste, but 3 stars for the amount of effort and time these cake balls take. Also, can anyone think of a more creative name for these little things than "cake balls" ??
