About this Cook
I'm a single, twenty-something living in small town IN. As you might imagine, the social scene leaves a little to be desired. Haha. Luckily a trip to Indianapolis is just about an hour drive. I'm a registered dietitian, enjoy my job and love my cute bungalow-style house. No husband or kids yet, but I do have a crazy kitty named Jasper.
My favorite things to cook
As a general rule, I try to make every recipe I try as healthy as I can without sacrificing the taste or appearance. This can be a challenge, but is well worth the effort. As a dietitian, I see first hand the effects of poor eating and exercise habits. I vow to never become one of these statistics. The one thing I do indulge in is dessert. I figure I eat clean the rest of the day, I've earned a little something sweet. I love baking in all forms, but still haven't mastered the decorating aspect yet.
My favorite family cooking traditions
I grew up with a stay at home mom who baked everything from scratch. Yes, that might make me a little spoiled, but I wouldn't change it for the world! We rarely bought a loaf of bread from the store or a bag of cookies. These were things that came warm out of the oven. Christmas time was my favorite holiday tradition. Mom and I would bake batch after batch of cookies...lining the tables with sweet treats. We then gently packed them in tins to make the 10 hour drive to PA to visit relatives.
My cooking triumphs
Making my mom's famous stuffing for Christmas with half the amount of fat and no one knowing the difference!
My cooking tragedies
Trying to cook healthfully does have it's pitfalls. I've made my fair share of muffin "bricks." :) My favorite tragedy was one of my mother's though. She tried to make brownies with cooked spinach in them - absolutely disgusting!!

Mini Frittatas
The cumin (I even used half as suggested by others) and spinach dominated the dish. Boyfriend did not care for them and said it had an "earthy" flavor. I agree. If I made it again, I would cut back even further on the cumin or leave it out completely, add some form of meat and crushed red pepper. Maybe some feta, too.

Ricotta Cheese Cookies
I only had enough ricotta to make half the recipe. Decided to make a "bar cookie" out of it instead of drop cookies. Placed the dough in a ~6x10 baking dish and baked for about 30-35min. When cooled, I topped with the powdered sugar mixture, which included some almond extract. Very good. Was more of a dense cake consistancy than a bar cookie, but it got good reviews from friends and family.

Amaretto Cake
It got good reviews at the dinner I took the cake too. My biggest complaint is that it gets soggy - quick! Best at the first sitting.
