Gourmet Mushroom Risotto

Pretty good. Kind of salty, kind of just a little weird texturally. I might make again but in a much smaller batch. There's no way this is the right amount for 6 people. More like 10.

Baked Potato Soup

Yummy. Used the rest of the bacon fat and some chicken broth to sautee the chopped potatoes before adding to broth. They are way too firm if you do not roast/sautee first. If you do it this way cut bk to 1/2 tsp of salt.

Grandma Ople's Apple Pie

I always use less apples, and my pie always sinks! Oh well, it still tastes great! More like a Caramel Apple Pie than traditional apple pie. Sprinkle with cinnamon and nutmeg if you prefer that taste, however I like it just the way it is!

Kosher Salt Encrusted Prime Rib Roast

Delish! I didn't crust properly, but it still came out really good. The parts that were crusted properly were amazing! It gives me incentive to keep trying, bc even the mistakes are delicious!

Chestnut Pasta

I used it as a starting point for making ravioli filled with truffled chestnut puree in a sage browned butter sauce. Just needed a jump off and this helped.

Rosemary-Scented Pork Loin Stuffed With Roasted Garlic, Dried Apricots and Cranberries and Port Wine Pan Sauce

It was ok. Really fruity. I thought it would be exotic and interesting, and I guess it was- but not something I'd do again. Noone touched the leftovers.

I didn't like it AT ALL and I am Italian and usually love capers, olives, and all things briny. Not this. Calls for WAY TOO MUCH EVOO, use half like 1/4 cup. Also the sauce recipe will leave you with leftovers, so make extra pasta. Tasted fishy :(

Greek Tzatziki

Yum! Had to use double the ingredients (not the yogurt but everything else) for good flavor. Important to let it sit for a few hours before adding anything though to see where it is at flavor wise, then proceed with modifying.

Kale Chips

needed lots more of everything fro seasoning, but pretty good. Crunchy greens aren't really comparable to potato chips, but if forced to give a comparable item I would have to say chips as well- but it is a lousy expectation! They are completely unique, and worth a try at least once.

Roasted Onions

YOU HAVE TO PEEL THESE! The skin is borderline inedible. Basically, you chop the onion in half, chop off the tip, drizzle with EVOO and sprinkle with salt and pepper. Cut a slit in the top and wedge in a 1/4-1/2 clove (piece) of garlic. Roast like 25-30 mins, and they're GREAT! Kind of bland, in the sense you'd want to serve them with steak or mushrooms or something in addition to it.

Grilled Grouper with Mango Butter

The mango butter was good, if you like mango butter. It is more of a sauce, and I recommend whisking it together once you've reduced it. It has a sweet and salty type tang to it. I personally didn't realize how sweet it was going to be, and I didn't use much. I prefer my fish cooked with lemon and butter and/or capers. So this wasn't for me, but I encourage you to try it if you were interested enough to pull up the recipe!

Steamed Blue Crabs

**DISCLAIMER**You must like old bay to like this recipe. I do love the use of beer, it tastes so rich and infuses so much flavor into the crabs. I have also steamed crabs with beer, garlic, and a sprinkling of old bay which was a huge crowd pleaser.

Yummy Tater Tot Casserole

Only used 1 stick of butter (1/2C) and 28 oz of tots. I also put all of the cheese called for on top (not mixed in) and omitted potato chips (put under broiler for about 5 mins to crisp up cheese). Before putting in the broiler, I sprinkled the top with garlic powder, salt & pep. Also added about 2 tbs of french onion dip that was sour cream based for some oomph. Even my casserole snob/exec chef bf loved it...... which means ALOT in this house! Next time I may try to crisp up the tots first since it was kind of mushy, but that is just a minor revamp, that's truly not necessary bc this is great as is!

Mango Pina Colada Smoothie

Wow. This is amazing. I used 6oz of pineapple juice, about 8oz of mango rum and 3 ounces of mango juice, no sugar and 3 scoops of vanilla ice cream (no heavy cream) This is quite possibly the best adult beverage I've ever had in my life! THANK YOU!

Creamy Cauliflower Salad

The sauce is good- must use less sugar and add salt. I added chopped red pepper instead of tomato out of personal preference as well as a shallot. Must let sit overnight to soak in all the sauce. I am not a fan of the raw cauliflower, next time I make it I will probably slightly cook it somehow to get rid of that raw crunch. Overall very yummy.

Ranch Dressing II

Good. Even better? Taking the amount of dry seasonings called for and using it like you would a dry mix packet of ranch that costs about $3 from the grocery store. I use the dry mix in cream cheese for veggie dips, bacon ranch pasta salad form this site, and countless other recipes.
