Banana Sour Cream Bread

These smell so good when they're baking and they taste great. I bake double batches, then wrap all the extras in a couple of layers of plastic wrap. Two loaves fit in a freezer bag and you can take one out and defrost it in minutes in your microwave!

Chocolate Covered Cherry Cookies II

I baked a bunch of cookies for a taste test- I wanted to find a winner to enter the county fair. They weren't difficult to make, but there were a lot of steps. I thought these were pretty good, though they weren't the stand out I was expecting. My taste testers ranked them in the 3rd and 4th spots out of 7.

Lisa's Chocolate Chocolate Chip Cake

I've made this many, many times... it's delicious every time. It never lasts long! It's delicious plain, but I like to serve it with whipped cream and raspberries. I don't recommend dusting it with powdered sugar, though, because the cake is too moist. It makes it look like it has a damp gray coating.

Canned Apple Pie Filling

I made this last fall and we just used the last jar. It was delicious! However, the longer it sat, the more gelled it got. I will use less corn starch next time, but I can't wait to make it again. All you have to do to make the best dessert at any gathering you take this to, is open the jar and put it in a pan. Bake at 375 for 30 minutes with this topping: mix together a stick of melted butter, a cup of oats, a cup of all purpose flour, and a cup of brown sugar. Delicious! Also, a tip: take the screw lid off the jar and wipe the rings down before replacing it for storage.

Portuguese Custard Tarts - Pasteis de Nata

The custard part of this recipe is BRILLIANT. I mean, wonderful!!! Mine didn't turn out exactly right because I didn't put enough custard into the tarts- they ended up with just a slight coating that turned chewy during the baking. Totally my fault. But I ate the rest of the custard right out of the pan so it was ok!

Cracker Salad

This is my husband's favorite salad. We both love it! I hardly ever add the cheese and it's still great. But, you have to assemble it at the last minute because it will get soggy pretty quickly.

Mom's Zucchini Bread

This is a great recipe. I had a couple of huge zucchini from our garden. I scooped the seeds out and grated the rest in the food processor, using 3 cups of zucchini instead of 2. I was a little worried because the dough is so thick and sticky before you put the zucchini in. Don't drain it! That adds much needed moisture. It turned out great exactly as written.

Six Can Chicken Tortilla Soup

I love this recipe! It's one of my favorite standbys. I use one of the large cans of regular chicken broth and one can of condensed cream of chicken soup. I add those first and mix them up well before adding the other ingredients, or else I get globs of the cream of chicken that won't dissolve. This seems to give me the right ratio of soup to solids and adds a little bit of creamy taste without being too heavy. I also add a little garlic powder, onion salt, and some dried parsley flakes. One tip: be sure to rinse the black beans well or they will turn the whole thing a disgusting blue/gray color! (It still tastes good, though.) I skip the tortilla chips and serve with cornbread muffins.

Pineapple Upside-Down Cake VII

This cake is so beautiful and it always gets me a lot of compliments even before any one tastes it. I've made it 3 times now and it turns out great every time. There is always more than enough juice in the can to substitute for all of the liquid called for on the cake mix. I use the butter yellow cake mix that has pudding in it. Delicious!

Cinnamon Ice Cream

I followed the recipe exactly and my husband said it was the best ice cream he'd ever eaten. I got an ice cream maker in May and we've tried many, many recipes over the summer. This is still my favorite! I can't wait til the fall so I can make it with all those yummy apple desserts.

Jam Filled Butter Cookies

This is a very quick and easy cookie to make. They turn out great every time and you can mix up the jam flavors for everyone. I love fig, apricot, and strawberry! A ziplock bag with the corner snipped off gets the jam in place without a big mess. Be careful not to overfill, though, or it will burn the excess jam and make it really chewy and tough!
