I'm a mom of two. I spend most of my time chasing after my toddlers and trying to keep up with the cleaning. I love to read and try to read a little each day to keep my sanity.
My favorite things to cook
Pasta. Anything with pasta. I love the smell of onions and mushrooms cooking in olive oil and I love tomatoes. My husband doesn't like tomatoes that aren't cooked so I use a lot of stewed tomatoes instead of fresh.
My cooking triumphs
Any time that leftovers aren't pushed to the back of the fridge and forgotten.

Melt-In-Your-Mouth Meat Loaf
Best meatloaf I've ever had. I couldn't find my bread pans so I put it in an 8x8 nonstick pan. I cooked this in the oven at 350 for about 90 minutes to make sure is wasn't pink. Next time I'll double the sauce, it just wasn't quite enough. Great recipe!

Sesame Pasta Chicken Salad
Very tasty. I will have to half the oil next time and maybe add a bit more of the other ingredients. Everyone loved it at the bbq and they all wanted the recipe.

Spicy Sausage Casserole
I cooked this all together in a cast iron skillet. I cooked the sausage first (I had 3 brats), then added two sliced carrots, 2 slices of onion (chopped), a can of chopped stewed tomatoes, 1/2 c of frozen corn and peas and 1/2 can green beans. There wasn't much liquid so I added about 1 c water so that it could simmer together and cook the carrots and onion. I added about 1/2 t each salt, pepper, parsley, red pepper flakes and a dash of oregano and two green onions. I threw in about 1 c of leftover spaghetti sauce that I had leftover like Aly suggested. It simmered for about 20 minutes and then sered it over rice. Very tasty.
