Zucchini Herb Casserole

Loved this! It was such a good starting point for the absolutely most heavenly casserole! I grated my zucchini since my kids hate zucchini, added chopped broccoli seasoned just like listed here, only adding thyme. When I cooked the rice I added a hint of turmeric for color and chicken bouillon cube for flavor. I mixed it all together and added sour cream for creaminess, also grated Parmesan cheese (fresh) and mixed it together topping with cheddar cheese and baked it in the oven. Absolutely amazing! :)

Ooey-Gooey Cinnamon Buns

Absolutely the best cinnamon roll I have made in my life, and I have made 100s of them! This is the only recipe I have made more than once, and in fact have made now more than 5 times! No changes made, once in a while I leave the nuts out, but otherwise followed recipe to a tee! Enjoy! And stop looking for a cinnamon roll recipe cuz this is it!

Delicious Gluten-Free Pancakes

These were really good! We are just now learning about gluten free cooking and baking, but unfortunately we can not do eggs or milk products along with gluten. I used Energizer Egg replacer instead of the eggs, and coconut milk instead of the buttermilk powder and two cups of water. I also used half white rice flour, and half brown rice flour. I will make these again, but may cut back the rice flour and use sorghum in the future. They were definitely gummy rice flour in texture. I must add though my kids scarfed these up faster than our usual gluten egg milk pancakes, and asked for seconds and thirds!

Cake with Buttercream Decorating Frosting

Absolutely the best frosting I have ever made. I didnt add the salt, since my butter was salted, but everything else followed to a tee. It held color, and was perfectly stiff for all my decorating needs, and for once this recipe needed no doubling! In fact I had to bake a second cake to use up the rest! If you intend to just frost a cake with it, do thin it out a bit more using a a few tablespoons more milk!

Best Moist Chocolate Cake

This cake needs a 10, I have made this several times, and will from now on be my go to chocolate cake! It is just amazing, no adjustments, no additions. Yesterday I even accidently left out 1 teaspoon of the baking soda and it was still good! It in fact made a denser cake, that I was more able to decorate.

Pillow-Soft Dinner Rolls

Absolutely delightful! It did need a lot more flour than recipe called for and if your not baking for an army I do recommend cutting it in half. We actually stuffed our dinner rolls with onions and cheddar cheese and then topped them with cheddar cheese before baking. We used the left over dough to make hot dog rolls! It was amazing!

Easy Shepherd's Pie with Garlic Romano Potatoes

This one is definately going in our family cookbook! Everyone went back for seconds and thirds. The only things we changed was the veggies and we used fresh shredded carrots and zucchini and fresh green beans and cooked them until tender crisp prior to putting then in the pan to cook in the oven. I cant say this could get any better!

Cauliflower Cheese Pie

This is dangerous in my house! It was so good you went back for thirds and fourths! We all absolutely loved it. Only thing different we did was add more eggs and milk, but my eggs this week seem very small, and I think in the end we had way more cauliflower than this recipe would typically do. I also increased the thyme because theres nothing better than thyme and used oregano instead of basil since basil is unavailable here. The potatoe crust was just the right amount of thickness and yummyness. This recipe combined all of our faves--quiche, hashbrowns and cauliflower! Enjoy this one fresh out of the oven, or reheated later in the day, it was just as good if not better as leftovers!

Zucchini Chocolate Cake

Good recipe though far to oily. I followed recipe as directed except forgot to add salt (really no need) and left out the nuts due to allergies. In the future we will definately use this recipe, though will omit the oil or butter, either one, and replace with milk. The hint of cinnamon was wonderful, and it was very moist and chewy. Next time I will also use one less egg, to make it more caky vs being so chewy.

Carrot Oatmeal Muffins

This was by far the best muffin we have had in a LONG LONG time! I did however do the following to the recipe based on other reviews.. 1) Decreased oil to 1/2 cup and could have gone to 1/4 cup, and added 1/2 cup MILK 2) doubled cinnamon and added about 1/2 tsp ginger 3) added a touch of sugar to the cream cheese 4) decreased sugar to 1/2 cup each, and that was still really sweet

Baked Spaghetti

This was okay, but certainly a good start of something wonderful! Needs more veggies ie bell peppers, or something. Pretty dry and bland in my opinion. I used sour cream instead of the cottage cheese, but that was my only substitution.
