Zucchini Herb Casserole
Loved this! It was such a good starting point for the absolutely most heavenly casserole! I grated my zucchini since my kids hate zucchini, added chopped broccoli seasoned just like listed here, only adding thyme. When I cooked the rice I added a hint of turmeric for color and chicken bouillon cube for flavor. I mixed it all together and added sour cream for creaminess, also grated Parmesan cheese (fresh) and mixed it together topping with cheddar cheese and baked it in the oven. Absolutely amazing! :)

Ooey-Gooey Cinnamon Buns
Absolutely the best cinnamon roll I have made in my life, and I have made 100s of them! This is the only recipe I have made more than once, and in fact have made now more than 5 times! No changes made, once in a while I leave the nuts out, but otherwise followed recipe to a tee! Enjoy! And stop looking for a cinnamon roll recipe cuz this is it!

Delicious Gluten-Free Pancakes
These were really good! We are just now learning about gluten free cooking and baking, but unfortunately we can not do eggs or milk products along with gluten. I used Energizer Egg replacer instead of the eggs, and coconut milk instead of the buttermilk powder and two cups of water. I also used half white rice flour, and half brown rice flour. I will make these again, but may cut back the rice flour and use sorghum in the future. They were definitely gummy rice flour in texture. I must add though my kids scarfed these up faster than our usual gluten egg milk pancakes, and asked for seconds and thirds!
