Chicken 'n' Biscuits

I didn't have everything for this dish. I had to use canned veggies (1 can of each peas, corn and potatoes) because I didn't have a frozen mix. I also used pre-packaged biscuits. It took longer to cook than stated - my chicken was still raw after 20 minutes. Next time, I'd like to make it all from scratch, with fresh veggies. Overall, it was a tasty dish though!

Mexican Casserole

I was looking for something to make with defrosted chicken breasts after my husband backed out on making supper for us at the last minute. I didn't read the reviews, I just checked to make sure I had all the ingredients. I didn't have everything, but I had enough to substitute. I used kidney beans and and soft taco shells. I layered it taco shells ripped up, the chicken/corn/bean mix, cheese and tacos again. It was really good! Next time I will definitely make some changes though. I was thinking of things to add while I was quickly throwing this dish together!

Jamaican Beans and Rice Dish

I will not be making this one again. I used 3 cans of coconut milk (almost 6 cups), 2 cups of rice and 2 cans of beans. The only way we could stomach it was to mix it with our creamed spinach. I had to drown it with hot sauce. I am sure there is a better recipe out there.

B.L.A.T. Wraps

My husband was disappointed I didn't make a 'large' meal and voiced his concern and questioned if these B.L.A.Ts were just the appetizer. He doesn't like avocado, but he ate these! And he was full after eating only two! These made a great last minute dinner for us. Thanks for the recipe!

Crispy Rosemary Chicken and Fries

I cut the olive oil to 1/4 c. since like was mentioned, thighs create there own oil. I also used dried rosemary and oregano and doubled them. The potatoes had a very pleasant chicken flavor to them (used Yukon Gold), but otherwise was kind of bland. Next time I will season the potatoes separately and completely cut out the oil. (I also bet some Parmesan cheese on the top of the potatoes would be good).
