About this Cook
I'm a stay at home mom, that lives on the internet. I am not a very eager cook, really. I like to try cooking new things, but I don't like to live in the kitchen either. If I had a dishwasher and more counter space, maybe. My son and daughter both like to help me cook, and enjoy eating most of what I make (both are kind of picky). I am definately after new things to make, and easier ways to make them.

My favorite family cooking traditions
We usually make a few dozen cookies around the holidays. My mom and I split the holiday cooking, and on Valentine's I make 'surf n turf' for my husband and me.

My family and I make it through each day after eating my food.
My cooking tragedies
So many tragedies, so little triumphs. When I cook, I actually get frustrated. I wear everything, dump things, burn things and just generally, everything that can go wrong, does. I tried making Christmas Tree cupcakes, and not one would stand up for me. I threw all 20 away. I was very upset as they were for my daughter's birthday. So, that's just a taste of what I normally go through.

Mexican Casserole
I was looking for something to make with defrosted chicken breasts after my husband backed out on making supper for us at the last minute. I didn't read the reviews, I just checked to make sure I had all the ingredients. I didn't have everything, but I had enough to substitute. I used kidney beans and and soft taco shells. I layered it taco shells ripped up, the chicken/corn/bean mix, cheese and tacos again. It was really good! Next time I will definitely make some changes though. I was thinking of things to add while I was quickly throwing this dish together!

Jamaican Beans and Rice Dish
I will not be making this one again. I used 3 cans of coconut milk (almost 6 cups), 2 cups of rice and 2 cans of beans. The only way we could stomach it was to mix it with our creamed spinach. I had to drown it with hot sauce. I am sure there is a better recipe out there.

B.L.A.T. Wraps
My husband was disappointed I didn't make a 'large' meal and voiced his concern and questioned if these B.L.A.Ts were just the appetizer. He doesn't like avocado, but he ate these! And he was full after eating only two! These made a great last minute dinner for us. Thanks for the recipe!
