Black Bean and Couscous Salad

This was delicious and easy to make! I bring it to lunch with me almost every day! I would definitely add a little more cumin and perhaps some cayenne or red pepper flakes just to give it a little more of a kick. But this recipes is definitely a keeper!

Easy Curry Couscous

This was the easiest, most delicious side I have ever made! I felt like I was eating at an Indian restaurant! I mixed chicken in the couscous with some peas, it was amazing. I really like this dish too because, like at the restaurant, you can make it as mild or as spicy as you want by adding red pepper flakes.

Sweet, Sticky and Spicy Chicken

This dish was so fantastic! I had debated whether or not to cook or get chinese take out and I decided to make this.. well I was not disappointed. MIne ended up very spicy though, which was fine, but I might cut back on the hot sauce next time. You must try this dish if you love general tso's chicken.

Peanut Butter Noodles

I gave this recipe five stars because this is the ultimate dish! It tastes just like take-out! However, I added a bunch of veggies such as onions, broccoli, peas and shredded carrots. I also added chicken-- all of these ingredients made it taste like paad thai. So good! But add the veggies and chicken!!! And don't forget the chili sauce for the extra kick. (You also don't have to use fresh ginger, just buy pre-minced ginger.)

Pumpkin Turkey Chili

The only reason I am not giving this 5 stars is because I modified the recipe quite a bit. Like other commenters I added an extra can of tomatoes and I almost had to triple the amount of chili spice to give it some flavor. My boyfriend, being a spice fiend, added a bunch of tobasco sauce as well, which gave it a great kick and tempered the sweetness. I also used ground chuck instead of turkey, which gave it a richer flavore. This is a great hearty chili though and I would highly recommend the recipe to anyone and everyone!

Pork Chops with Apple Curry Sauce

I LOVED this recipe! It was so easy to make and it tasted like I had just ordered a meal from my favorite Indian restaurant. My only recommendation would be to get the thickest pork chops you can because I found they were overwhelmed by the fantastic curry sauce. Also, I only used one cup of the apple juice or it would have been very runny.
