Banana Oatmeal Cookie

Kids love them, I love them. A keeper. I used part whole wheat flour, replaced part of the fat with applesauce and, used 1/2 c brown sugar and 1/4 c white, and used choc. chips instead of nuts. They make a pretty good breakfast, too.

Addictive Pumpkin Muffins

I have made these muffins many times. I always use chocolate chips (usually 1 C mini), part whole wheat flour, and about the 1/2 the sugar (no Splenda, just less - I don't think muffins need to be that sweet.) I also vary the spices sometimes - more cin. less cloves, sometimes allspice or pumpkin pie spice. It all works. My kids love them. They are light and delicious. This time after reading some reviews, I added 1/2 t of ginger - YUM! A nicer touch than I expected - I may add more next time. I love this recipe.

Buttery Pan Rolls

This was my first attempt at dinner rolls, and they turned out great! The only changes I made were to use 1/2 whole wheat flour and not dip them in butter. I used them to make sliders - YUM!

Banana Banana Bread

Not that this recipe needs another review, but here is my 2 cents. I added a heaping teaspoon of lemon zest. My grandma's recipe calls for it, but the bread is too dry in my opinion. This bread is moist and dense. Makes great loaves, mini loaves or muffins. And the lemon zest gives it just that something extra that puts it over the edge.

Fantastic Lemon Butter Fillet

I didn't have any lemon pepper, so I let it out. Husband and kids loved it! I will try subbing part of the butter for olive oil next time for the sake of dh's cholesterol.

Sweet and Sour Sauce I

Yum! So much better than that bright red stuff we get at the Chinese restaurant - and so EASY. I will never but s&s souce again. I did as another reviewer suggested, use brown sugar, more ketchup, and pineapple juice. I also added the cornstarch (with water) after the mixture came to a boil.

Hearty Breakfast Cookies

Good but not great, but probably due more to my changes than to the original recipe. cut the sugar, perhaps too much, and I didn't account for the lack of sugar in my natural peanut butter. also added mini choc. chips and banana. They are good for breakfast and my preschoolers like them (which was the whole point) but the don't satisfy my cookie craving so I think I will try "Beth's Oatmeal Cookies" next.

Scottish Shortbread I

I made this and Scottish Shortbread 4 this weekend (also very good). Very light and melt-in-your-moouth, but compared to 4, a little lacking in flavor. I may add vanilla if I do this one again.

Scottish Shortbread IV

This was my first atempt at shortbread. I was looking for a simple tasty cookie for the holidays that I could leave alone or decorate if I felt ambitious. They turned out great. Having never made shortbread, I wasn't sure what the dough was supposed to look/feel like when it was ready. I may have over kneaded it. They were somewhat, but not too hard. A nice crunch. I also tried Scottish Shortbread 1 which turned out much lighter. The shortbread lovers in the family loved them both. I will definitely be using this recipe again.
