Mediterranean Quinoa Salad

Excellent recipe. I used Red Quinoa and substituted chopped cucumbers and shredded carrots for the pepper. We will be eating this often.

Banana Wheat Bread

Really good, healthy recipe. I made muffins as another reviews suggested because I always burn breads. They turned out really well! I added craisins and some apple butter. Next time I will add cinnamon as well. Good stuff.

Black Bean and Corn Quesadillas

This will become a dinnertime staple. Super great, healthy meal. I just started using dried beans recently and after following the quick soak recommendation on the bag, I threw them into a crockpot, covered them with water, added a bay leaf and some salt and pepper. 3 hours on high later, I had really, really yummy black beans that were better than any canned I have ever had. They were great in this recipe~

Absolutely Fabulous Portobello Mushroom Tortellini

I made this recipe substituting linguine for the tortellini, because that's what I had. The flavor was nice. I don't usually like alfredo, but I will make this again. The fiance loved it!

Tabbouleh II

This recipe, as is, seemed (surprisingly) bland to me. I was able to adjust the flavor to my liking by adding a bunch of garlic powder, a few healthy doses of kosher salt, a bit of cumin and some fresh ground black pepper. I added more onion after we ate some for dinner tonight and am letting it sit in the fridge, hoping it will get be more flavorful tomorrow. That being said, my fiance, who refers to veggies as "rabbit food," went back for seconds. Extra star just for that!

Savory Roasted Root Vegetables

I just made this for dinner tonight and it was so super great. I used purple and orange beets that didn't have stems attached, added sweet potatoes and about a tablespoon of balsamic vinegar. I didn't have any white wine so I substituted it with chicken broth and a bit of lemon juice. Good stuff!

Easy Pasta Fagioli

I really liked this recipe. Here are the changes I made: I added an entire finely chopped onion, one bay leaf, 2 T. fresh parsley instead of dried, and an additional garlic clove. For the broth I used equal parts tomato sauce and chicken broth (about 32 oz. each). Served with some homemade garlic bread.

Italian Pasta Florentine

We found this very unappealing. Too fatty and no flavor. It sat in the fridge and went bad...no one wanted any leftovers. I thought it would be good, but it fell really short.

Shish Tawook Marinated Chicken

This was very easy to make and so convenient to just pull out of the fridge and put into the oven the next day. My fiance loved it, asked for the recipe, and offered to make it again sometime soon. I included the curry without regret. I found this to be a little sweeter than I would prefer...I think I'll add more garlic to the sauce next time to counteract that. Thank you for this recipe!

Asparagus, Feta and Couscous Salad

A delicious couscous dish. I cut the recipe in half and still had a ton of food. I added extra feta, because I love it, and basil, oregano, and parsley as someone previously suggested. I mixed up all the ingredients except for the couscous and asparagus and let it prep in the fridge until I was ready to cook.

Broccoli Casserole II

Excellent recipe. I couldn't find the jalapeño cheese, so I substituted 8 oz. Velveeta and added some cayenne pepper. I also added some leftover cubed ham. I froze about 2 servings of the casserole uncooked with the directions written out on the top for another time.

Apple Butter Pork Loin

We thought this was very good. Next time I will only use one pork tenderloin because the two that came in the package were different sizes and the smaller one was overdone after 50 minutes. The larger one, on the other hand, was great after the same amount of time.

Divine Asparagus

I love asparagus, so I don't think that I could have disliked this recipe. It just wasn't as cohesive as I would have liked. I'll probably just go back to steaming it instead of all the trouble of this recipe.
