Black Bean and Corn Salad I

Great side dish - the balsamic w/ the spices comes out good. Refrigerated mine overnight to really let the flavor soak in.

Asparagus Potato Soup

Absolutely delicious! Husband stated, as another reviewer did, that it was like a soup you'd get at a restaurant. Only changes I made were to use chicken broth & water (skipping the chicken bouillon,) used 2% milk & I cut the butter down to 3 tablespoons. Will definitely make again soon!

Vegetarian Baked Pasta

Delicious recipe - the gorgonzola really gave a kick to the dish. Cut the mozzarella in 1/2 & used reduced fat as well to cut back on the fat (enough cheese for me, husband sprinkled more on his 1/2.) Only used 5oz of gorgonzola - that was the size of the package I got. Not sure if I'd want to use more next time - it seemed to taste just right with what I used.

Cheeseburger Soup I

Enjoyed it very much! Made a few changes - used 1lb of ground turkey, cut the butter down to save on the fat a bit, used 2% shredded cheese & light sour cream & steamed frozen baby carrots on the side & added to soup at end. Topped it off with some crumbled whole grain Club crackers. Definitely will make again!

Tangy Slow Cooker Pork Roast

Tasty, but not overpowering - just what I was looking for to doctor up the porketta roast I had a bit. Plus it was so easy to get together & w/ the cost of food today, I liked not having to buy a ton of extra ingredients - I had everything on the recipe! Only change I made was I doubled the recipe since I had a 4.5lb roast.

Crustless Spinach Quiche

Delicious & will make again! Only change I made was to use 2 cups of a reduced fat cheddar (since that was the cheese I already had) Made an easy weekend supper with some turkey bacon & organic multi-grain rolls. Also liked the taste of the spinach cooked with the onion & oil that I may make that as an easy side on its own.

BUSH'S® Best Black Bean Salsa

Very good - only change I made was to drain the tomatoes - felt it would've been too much liquid w/ that & the italian dressing. Used a light garlic italian dressing & 2 cans of diced tomatoes w/ chiles.

Spicy Sweet Potato Chips

Turned out great! Cooking time was spot on for me. For me, 1/4 tsp of cayenne didn't make it too spicy - in fact it was more sweet to me & I might add more cayenne next time.

Portobello Penne Pasta Casserole

Terrific recipe! After reading other reviews, made some changes: used a 14oz box of whole grain pasta, fresh spinach, low-fat mozzarella & 2% milk, cut butter back to 1/4 cup, doubled garlic, added an onion, red pepper flakes & pepper plus mixed most of the cheese in with the milk & only saved around a 1/3 cup to sprinkle on top. Not sure why others thought it was bland at all. Will definitely make again.

Soft Oatmeal Cookies

Great cookies - soft but not so soft they stuck to each other & tasted great! Everyone else loved them! Plus, while this dough was refrigerating, I was able to use the time to bake my choc chip cookies, so this recipe helped me manage my time a lot better too!

Sun-Dried Tomato Basil Orzo

Very tasty! Hit at home & office - came home w/ no leftovers. Some liked it hot, others cold but good both ways! Did follow others in not adding extra olive oil, & when I needed a bit, I just used the oil from when I drained the jar of tomatoes.

Veggie Vegetarian Chili

Delicious taste, filling, healthy & great for cold winter days! Even my husband (who never eats veggie chili) loves it, even more than the meat ones he used to make! The only change I made was I didn't put in the carrots.
