Veggie Vegetarian Chili

Reviewed: Dec. 13, 2007
Delicious taste, filling, healthy & great for cold winter days! Even my husband (who never eats veggie chili) loves it, even more than the meat ones he used to make! The only change I made was I didn't put in the carrots.

Roasted Red Pepper Dip II

Reviewed: Dec. 16, 2007
Good & easy recipe w/ a few minor adjustment - added a bit more hot sauce & a little more red peppers & let it chill overnight. Was a hit w/ everyone at my office w/ crackers & veggies!

Easy to make & delicious! Great summer/fall dip w/ apples! Even used it as a topping on bagels when I ran out of apples!

Sun-Dried Tomato Basil Orzo

Reviewed: Dec. 16, 2007
Very tasty! Hit at home & office - came home w/ no leftovers. Some liked it hot, others cold but good both ways! Did follow others in not adding extra olive oil, & when I needed a bit, I just used the oil from when I drained the jar of tomatoes.

Soft Oatmeal Cookies

Reviewed: Jan. 31, 2008
Great cookies - soft but not so soft they stuck to each other & tasted great! Everyone else loved them! Plus, while this dough was refrigerating, I was able to use the time to bake my choc chip cookies, so this recipe helped me manage my time a lot better too!

Aunt Carol's Spinach and Fish Bake

Reviewed: Feb. 18, 2008
Enjoyed by myself & my parents - used a combo of Aunt Carol's & the one posted. Used egg substitute instead of egg which turned out fine. Baked from 25-30 min. Overall pleased w/ dish & will make again.

Best Spinach Dip Ever

Reviewed: Feb. 18, 2008
Delicious! Leek soup mix gave it a different, but good taste! Used light sour cream & light mayo to cut down on fat a bit. Didn't make w/ bread bowl - used multi-grain crackers & chunks of pumpernickel to dip in it.

Cheesy Beans and Rice

Reviewed: Mar. 6, 2008
Delicious & filling! Followed recipes as is. Since we're trying to eat healthier dishes (cutting back on meats & making mostly vegetarian dishes (esp. w/ beans) this one is a keeper for us!

Slow Cooker Corn Chowder

Reviewed: Mar. 6, 2008
Made a few changes - used only 1 onion, skipped the ham since I didn't have any as well as the celery (which I just don't like,) 1 can corn + 1 can creamed as per other's reviews (though next time I might even add another can of corn, but drain it,) used chicken broth instead of water & added in corn starch & half & half per other reviews. Only problem w/ mine (& it was my fault) was putting to much chicken broth in so it was more of a soup texture than chowder texture. But overall good tasting & will make again - it's a good & relatively easy crockpot recipe & was exactly what I was looking for.

BUSH'S® Best Black Bean Salsa

Reviewed: Mar. 10, 2008
Very good - only change I made was to drain the tomatoes - felt it would've been too much liquid w/ that & the italian dressing. Used a light garlic italian dressing & 2 cans of diced tomatoes w/ chiles.

Both me & husband absolutely loved it - might add a bit more broccoli next time, but otherwise no changes at all. Definitely making this again!

Baked French Fries I

Reviewed: Mar. 31, 2008
Good & easy potato side to make. Don't have to worry about whether I have the ingredients on hand. I used 5 potatoes, 2 TBSP of olive oil & just sprinkled the seasonings on. Will cut down time to 40 min - got a bit burned at 45 min at 450 degrees.

Tangy Slow Cooker Pork Roast

Reviewed: Apr. 17, 2008
Tasty, but not overpowering - just what I was looking for to doctor up the porketta roast I had a bit. Plus it was so easy to get together & w/ the cost of food today, I liked not having to buy a ton of extra ingredients - I had everything on the recipe! Only change I made was I doubled the recipe since I had a 4.5lb roast.

Three Bean Salad

Made recipe exactly as is - husband loved it, but I felt the vinegar was overpowering all the other flavors. Will try less vinegar next time.

Great side dish - the balsamic w/ the spices comes out good. Refrigerated mine overnight to really let the flavor soak in.

Turned out great, though am not one to fry fish (or anything else) often. Nice variation on coating using oatmeal. Will try other reviewer's tips on baking next time.
