Oven Roasted Potatoes

Delicious recipe! Did not measure seasonings out exactly - just eyeballed it when I sprinkled them into bowl. Only one I didn't use was marjoram due to not having any. Also left skin on potatoes, coated pan with a little olive oil to help prevent sticking & set temperature for 425.

Fried Broccoli

Brussels Sprouts with Mushrooms

Spinach and Leek White Bean Soup

Enjoyed very much! Very healthy & easy to make. We did add more cumin & bay leaves & probably more than a pinch of salt & pepper. Used minced garlic, organic vegetable broth, dry cannellini beans I had previously cooked & fresh organic baby spinach & probably closer to 1 or 2 tbsp of olive oil. Did use 2 cups extra broth as others recommended to make it more like soup - with amount of broth stated here it becomes more of a side dish, not a soup.

Magnificent Cheesy Brown Rice

Nice simple way to add a vegetable to a brown rice side. Used vegetable broth instead of water & instant brown rice to cut back on the cooking time. Also used 1 1/2 peppers & scallions. Will try different seasonings next time - I can see how some might find it bland, especially since plain brown rice doesn't have the sodium like other rice side dishes do.

Baked Brussels Sprouts

We really liked the basic recipe. Skipped nuts & cheese due to looking for simple recipe as side. Used half the amount of butter. Cooked extra 15 minutes since we like them more tender.

Triple Threat Fruit Smoothie

Did not have blueberries to use (& they are expensive where I live) & used Chobani's strawberry organic greek yogurt. Made with kiwi & without. Kiwi added a tart zing to it & I think I prefer the smoothie without it. Overall easy to make & healthy breakfast/lunch.

Quick Black Beans and Rice

Spicy Sweet Potato Chips

Turned out great! Cooking time was spot on for me. For me, 1/4 tsp of cayenne didn't make it too spicy - in fact it was more sweet to me & I might add more cayenne next time.

Crustless Spinach Quiche

Delicious & will make again! Only change I made was to use 2 cups of a reduced fat cheddar (since that was the cheese I already had) Made an easy weekend supper with some turkey bacon & organic multi-grain rolls. Also liked the taste of the spinach cooked with the onion & oil that I may make that as an easy side on its own.

Good base recipe you can alter. I used wheat pasta, 1/2 an onion, milk in place of the water & added some garlic seasoning so I could have a quick meal tonight.

Cheeseburger Soup I

Enjoyed it very much! Made a few changes - used 1lb of ground turkey, cut the butter down to save on the fat a bit, used 2% shredded cheese & light sour cream & steamed frozen baby carrots on the side & added to soup at end. Topped it off with some crumbled whole grain Club crackers. Definitely will make again!

Vegetarian Baked Pasta

Delicious recipe - the gorgonzola really gave a kick to the dish. Cut the mozzarella in 1/2 & used reduced fat as well to cut back on the fat (enough cheese for me, husband sprinkled more on his 1/2.) Only used 5oz of gorgonzola - that was the size of the package I got. Not sure if I'd want to use more next time - it seemed to taste just right with what I used.

Easy, Cheesy Zucchini Bake

I was looking for a vegetarian side dish, so I made this without the ground turkey. Turned out on the watery side, so I will cook the zucchini 1st as others have done. Might skip the corn too - didn't seem to add to the dish overall. Did add some seasoning & used mozzarella as I was using that in a pasta dish I was making at the same time. Overall, will try again with some changes.

Asparagus Potato Soup

Absolutely delicious! Husband stated, as another reviewer did, that it was like a soup you'd get at a restaurant. Only changes I made were to use chicken broth & water (skipping the chicken bouillon,) used 2% milk & I cut the butter down to 3 tablespoons. Will definitely make again soon!

Turkey in a Bag

Smashed Cauliflower

Good taste - 1st recipe where I tried out parsnips. Husband really liked it - I thought it could use a little more zing. Drained cauliflower so as not to have the soupy texture like others. Did not get the mashed potato texture using a masher - will use the food processor next time.

Portobello Penne Pasta Casserole

Terrific recipe! After reading other reviews, made some changes: used a 14oz box of whole grain pasta, fresh spinach, low-fat mozzarella & 2% milk, cut butter back to 1/4 cup, doubled garlic, added an onion, red pepper flakes & pepper plus mixed most of the cheese in with the milk & only saved around a 1/3 cup to sprinkle on top. Not sure why others thought it was bland at all. Will definitely make again.
