Irene's Barbeque Sauce

Nice tangy bbq sauce. Easy to make. The onions were chunky in it. I used it in a baked bbq beef recipe, if I were going to use it as a side I would probably run it through the food processor to get a smoother texture.

Margarita Cake

I was so hopeful for this cake. I wanted to make it for a party so I made one the day before and the the cake deflated in the pan. The flavor was okay. Thinking it was just a fluke, I made another cake the next day and again it deflated. I have never had this happen to me and I have made MANY bundt cakes, my favorite being the Irish Cream on this site. Maybe there is too much liquid in this recipe?

Mango Blueberry Muffins With Coconut Streusel

These are fantastic! I did make some changes due to what we had on hand. I didn't have blueberries, but I had strawberries so I diced those with the mango. I also used 1/4 coconut oil and 1/4 applesauce instead of the butter and reduced the sugar to 1 cup. The coconut streusel topping is amazing and I will be using it on many other recipes in the future.

Best Chocolate Chip Cookies

Great classic cookie recipe. I chopped up left over easter bunnies for the chocolate chips and used 1/2 cup butter and 1/2 cup coconut oil. I also used 1.5 cups flour and 2 cups oat flour. This worked out best when I chilled the dough a bit and baked them at 325 for 11-12 minutes.

Coconut Cake IV

I had to change this a little because of what I had on hand. I used 1 cup milk with 1 Tbsp. vingegar to substitute the buttermilk and only used 1 cup of sugar, as I didn't want a really sweet cake. I also pulsed the coconut in the food processor for a few seconds. That being said the cake was good. The flavor was nice, but it was very crumbly. I made 2 8" rounds and split them to make a layer cake and they were falling apart as I split them. I frosted the cake with a white chocolate frosting and added toasted coconut between the layers with the frosting. It tasted good, but fell apart as I was cutting into it.

Chocolate Muffins

Really good, I did make a few changes to make them a little healthier for breakfast. I used 2% plain greek yogurt instead of sour cream, add 1/2 cup flax seed and replace vegetable oil with coconut oil. Next time I would like to substitute half the flour with whole wheat, I was out this time. Thanks for the great recipe!

Eggless Peanut Butter Cookies

These cookies turned out really thin for me. I even tried adding more flour and refridgerating the dough. I really like a thick, crumbly peanut butter cookie. I will keep looking for that perfect recipe!

Vegan Black Bean Soup

Great base recipe. I did make some adjustments to what I had on hand. I used garlic broth instead of vegetable, two cans of black beans with jalapeno and pureed two cans of pinto beans since I was out of black beans. Since I had seasoned black beans I left out the other spices except for a little cumin. It was one of the best soups I have ever had!

Easiest Focaccia Recipe

Really easy and good! I like quick bread recipes. I didn't even knead it, I let my Kitchen Aid doit!. I did add 1/2 of salt to the dough. I also topped it with some course sea salt and grated parmesan cheese. A nice combination of crispy and chewy.
