Real Italian Calzones
I think this is a great recipe. I found it very easy to make and very easy to modify the filling. I agree with another reviewer that adding a dash or two of pepper and using mozzarella cheese is better, but it's all what appeals to the individual cook - isn't that the great thing about calzone? This makes 4 large calzone. I let kids build their own by mixing the cheeses with basil and pepper and then having an assortment of other items they could add. A note of caution to not overfill them or put much liquid in the filling; both may cause breaks in the sealed edges.

Grandma's Corn Chowder
This didn't work well for me even using chicken stock instead of water, but it was also my first try with corn chowder. I found it pretty bland and thin. I incorporated a simple roux of flour and butter which provided a decent thickening effect.

Gingerbread Cookies I
I have been looking for a great gingerbread cookies for several years and was reticent to try this recipe because of some reviews. With revisions, it turned out to be the best 'so far.' I took reviewers' advice of doubling the spices, though the cinnamon was then overpowering so I will change that to 1 1/2 times. I also added 1 1/2 cups flour and baked at 350 degrees for 8-9 minutes. I suggest rolling them out at 1/4 inch for thick soft cookies. The lemon adds a subtle interesting flavor. They are very good, but not the perfect gingerbread cookie - yet.
