Lasagna Roll Ups

Reviewed: Jul. 18, 2013
Really appreciated this recipe for the guidance. I decided to saute zucchini, garlic and summer squash, blended it, then mixed it in the cheese mixture instead of the spinach/tofu suggestion. This made a ton and everyone devoured it (including the 2 year old)! Thank you for sharing.

Cream Cheese Frosting II

Reviewed: Nov. 9, 2009
Only 4 stars because I halved the cream cheese but oh my goodness this was good. I had to add extra sugar for a thicker consistency but I just chalked that up to the omitted cream cheese. Will make again and again! My family loved it as well.

Chewy Caramel

Reviewed: Oct. 30, 2009
I have made this twice; once for just to dip. I kept it warm by inverting a small bowl and placing the bowl of caramel on top of it inside my slow cooker set on low. Everyone loved it! This time I made it for caramel apples and it's setting up just fine in the fridge on the apples. Fantastic recipe-Thanks for Sharing it!

Quick Shrimp Scampi Pasta

Reviewed: May 13, 2009
Very good! I used a tblsp of minced garlic and half the butter. I also cooked some broccoli with the noodles and tossed it all together at the end. Sprinkled with some parm cheese and it was great.

Multigrain Pancakes

Reviewed: May 6, 2009
These are really good! I followed some of the other reviewers suggestions like using 1/2 cup whole wheat flour and omitting the cornmeal. I also completely forgot to add the salt-but never would have known. I added a palm full of mini choco chips and my daughter age them up. I had to add extra milk as my batter was very thick and used one whole egg. Thank you for sharing this healthy recipe.

Completely awesome!!! Got so many compliments it was incredible. I don't think I changed a thing-I made it as is. Oh, wait I did have to do the old-fashioned water+bouillon for broth. Thank you for sharing this recipe.

Honey Mustard Dressing II

Reviewed: Apr. 14, 2009
This was so good! I took the advice of using fat-free yogurt. I then used some actual honey mustard (2tbls). Will use again and again! Thanks for sharing. :)

Sweet Potato Casserole IV

Reviewed: Nov. 27, 2008
Oh My Goodness! This is a fabulous recipe. The only changes I made was canned sweet potatoes (yams) and 1/2 the sugar. My family & visiting family raved on & on about it. You will not be disappointed! I know canned potatoes is a major shortcut but I was stressing time.

Chocolate Chip Cookies Lite

Reviewed: Sep. 4, 2008
Very Good! I ended up doubling the batch, so added the entire egg, 3 tbls Smart Balance butter, pinch of nutmeg, & sifted in whole wheat flour when I thought the dough looked gloppy. I also used 1/2 bag mini chips (all I had!). So good-not pancake-y but soft & tasty!

Red Potatoes with Beans

Reviewed: Sep. 4, 2008
I tweaked this a little. I did boil the potatoes until slightly tender. I made the Simple Sicilian Salad Dressing. I put the potatoes, beans, & red onion in a casserole dish, then poured the dressing over them. I roasted them for about 20 mins..until potatoes were browning & tender. They were very good-got rave reviews!

This is a great dressing. I added more Italian spices but that was all. I poured it over some red potatoes & green beans then roasted them in the oven...they were so good!

Pork Chops with Jalapeno Jelly

Reviewed: Aug. 12, 2008
This recipe is fabulous! I had all ingredients except jalapeño jelly, but red pepper jelly. In the end it was like a sweet n' sour sauce-hubby & 4 yr old picky eater devoured it all! Also, boiled the marinade w/some broth for a sauce-was a big hit as well.

Thai Peanut Butter Sauce

Reviewed: Jun. 5, 2008
This was wonderful! I followed it almost to the T-had to use honey as I didn't have any corn syrup on hand. I didn't measure the peanut butter because I made as a "bottom of the jar" sauce. Fabulous! Thanks for this recipe.

I made this into cupcakes and they are good. I added a touch of almond extract (I do that alot) & used butter instead of shortening. Thanks for the wonderful recipe-I'll never get a box mix again!

This was very good. I changed it up a little to accomodate items I had on hand & for extra servings. I also added the Thai Peanut Butter Sauce to it & it was fabulous. Very nice healthy meal-even my 4yr old picky eater LOVED it. Thanks for the great recipe.

Strawberry Bread

Reviewed: May 20, 2008
This was such a hit at our bake sale. Almost sold every slice! I substituted 1/2 the all purpose flour for half whole wheat flour. It was so moist and had wonderful flavor. I have had many requests to bring this bread to upcoming events!
