Hamburger Potato Casserole

I found this recipe by accident and boy am I glad! My hubby is strictly a meat a potatoes guy and he loved this dish. I tweaked it a little; added the sour cream as suggested by another reviewer and added a layer of cheese in the middle. I also put in more spices, garlic and onion powder, some parsley flakes and a pinch of basil, and cooked the meat with a couple of bouillions cubes. It turned out absolutely wonderfully and gave it a more "cheesburger" flavor. I used foil to cover it and the potatoes were nice and tender after only an hour in the oven. Thanks for the great comfort food recipe!

Scarlett's Chicken Cacciatore

I too left out the green peppers as my hubby is very picky. The only thing I changed was I used less onion and served it over spaghetti instead of egg noodles. Great one dish meal, just serve with garlic bread and you're good to go.

Homemade Lasagna

I also made a little more sauce and put a layer of sauce in the bottom of the pan. Then I drained the cottage cheese to make it more dry. It came out perfect!

Chuck Wagon Stew

I loved this recipe and it's a good basic recipe. I used onion powder (because my husband likes the taste of the onion, just not the texture) and added a pinch of garlic powder, some fresh sweet basil and parsley. I also added more water and boullion cubes to make it more like soup. We sprinkled shredded cheddar on top, served it with crusty rolls and it was a winner. Definitely one of my favorite comfort meals! Great for chilly weather too.

Oven-Crisped Potatoes

Great basic recipe. I washed the potatoes, left the skin on and used onion powder instead of real onion. I also added a dash of garlic powder, about a teaspoon of fresh parsely, and topped them with some sharp cheddar. Tasty.

Florentine Artichoke Dip

This recipe was fabulous and much easier than the ones I've made in the past. The first time I made it I didn't have any artichokes so I spiced it up with extra lemon juice, garlic and Monterey Jack cheese. It gets a little thick as it sets so I put it in the crock pot on low and it was a huge hit at our last poker party.

Easy Cheesy Scalloped Potatoes

I thought this was a good basic recipe but my husband raved about it. The second time I made it, I substituted for the chicken broth milk and added a sliced onion, about a half a teaspoon of garlic powder and a dash of paprika for color. It was a hit the second time around too.
