Butternut Squash Bake

Being a vegan, I left out the cheese, and added a supermarket container of sliced mushrooms, a cup of walnuts, and a teaspoon of cinnamon. wonderful!!

Broiled Tilapia Parmesan

My husband doesn't like Parm cheese, so I substituted plain bread crumbs and cut the lemon juice in half. Used Old Bay Seasoning...turned out great!

Apple Pie Muffins

Divine..absolutely divine. I didn't change a thing, made them exactly how the recipe was written. Make sure you cool them well before taking them out if you don't use muffin papers, because they fell apart a little because I couldn't wait. I don't know about the next day, because I just cooked them an hour ago! I did add to the topping some carmel sprinkle I just bought from Pampered Chef.

Creamy Lemon Chicken Soup

Excellent taste, it is Lemony, so those that don't like lemon..adjust. This can be played with, too..different veggies (I've used broccoli) and I even made this as a sort of minestrone, I used beef broth and ground beef..different, but still good.

Easy Peanut Butter Cookies

The first time I made these, as some others stated, they were a little "blah" but I changed the recipe: I bumped up the peanut butter to a little over a cup and instead of teaspoon of vanilla, I added a tablespoon. Much better!! Only cooked these 8 minutes which leaves them a tad raw and they stay soft, but we are a "tad raw cookie" lovin' family, actually, the dough itself is to die for! These are great with a rolo candy baked inside, too!

Special Pork Tenderloin

I thought this came out great!! I did make some changes. I didn't have brown sugar or the kind of applesauce called for, so I just used regular applesauce. Didn't worry about the brown sugar, I threw in about a tablespoon of honey. Then I was short on time and didn't have an hour for it to cook, so I browned it, put it in a microwave cooker and poured the sauce over and cooked it for 15 minutes. then I put it in the oven to finish it for about 15 minute. Came out great!!

Garlic Chicken Fried Chicken

This is a great way to put some taste into chicken breasts. I did make some changes..I marinated it in buttermilk like suggested by some others. the coating I used was flour, plain bread crumbs, pepper, Tastefully simple seasoned salt and Tastefully simple Bacon Bacon. I don't sell it, this is not a sales pitch, but the slight bacon taste was great!! I did the egg wash and breading and let it sit for 1/2 just like Emeril says to do with any coating..stays on better in the oil.
