Italian Style Pork Chops

Loved this, though even with turning them over halfway through the bake time they were still a little soggy on the bottom. Next time I well try a slotted baking pan.

Hillbilly Punch

Exactly what I was looking for! Sweet, summery, fruity. Maybe a tiny bit too sweet for some people, but you can sub diet soda or some plain cranberry juice. I made it probably fifteen minutes ago, so I can't attest to the alcohol effects, but except for a faint peach flavor of the cheap schnapps I used, there is no alcohol flavor. Yum!

Twice Baked Sweet Potatoes with Ricotta Cheese

I made these with breaded chicken and asparagus a few days ago. The baking time, however, seemed much too long, and I one shell completely fell apart while cooking! Luckily the flesh of all three fit nicely into two shells, and I was only cooking for two! I didn't have any brown sugar, or sage, so I instead mixed in some fresh chopped parsley. And I substituted about a teaspoon of orange blossom honey for each, in a small indentation before the last bake. Excellent recipe! My boyfriend is always reluctant to try new things, but he loved them!

Peanut Butter Noodles

Made this with out a lot of the ingredients. Made it rather bland, no chili paste or chopped onions. But even when using water and some chicken seasoning instead of broth this was DELICIOUS!

Chicken, Cheese, and Biscuits

This is a weekly standard in my household! It's such a great basic recipe that lends itself very well to tweaks. Some times we throw in some corn, sometimes diced broccoli, sometimes thin roasted ham! One caveat, the biscuits can be very doughy, so I find it's best to use the widest, shallowest casserole dish possible and make sure the biscuits are torn very thin.

Broccoli, Rice, Cheese, and Chicken Casserole

I tried this and made a few changes. Used chicken breast that I grilled and seasoned instead of canned chicken, added one extra cup rice, and replaced most of the processed cheese with sharp white cheddar and Jarlsberg. Added in a liquid chicken broth packet (reduced sodium bullion alternative) Reserved about a handful of shredded cheese for the last ten minutes. Also wanted to point out it is a heaping eight servings, and will feed two people for days!
