Chef John's Pumpkin Pie

Reviewed: Nov. 29, 2013
Best. Pumpkin pie. Recipe. Ever. Only thing I changed were the spices. I'm not big on super spicy pumpkin pie, so I used a tbsp of pumpkin pie spice and a tbsp of cinnamon and it turned out wonderful. I also baked for 35 minutes. Everyone who tried it loved it. This one is a definite winner. And yay!! NO CRACKS! Most sexy looking pumpkin pie I've ever made.

Mom's Cranberry Apple Pie

Reviewed: Nov. 29, 2013
Great recipe, however, my cranberries were super tart so I ended up picking around most of them while eating this. Don't know if this is normal for cranberries. I know they're relatively tart anyways, but mine just seemed way too sour. Some of them unbearably so. That said... I, like the other reviewers mixed the apples, sugar, cornstarch and cranberries together. Just makes more sense to do it that way. Next time I make this, I'll be changing the amount of cranberries to only a cup or maybe even just half a cup. Overall, really good and everyone that tried it liked it. A nice variation on apple pie. And for those curious…I used gala apples.

Chicken Enchilada Casserole I

Reviewed: Oct. 25, 2012
Pretty good but only with the alterations I made. I can't imagine making this the way the recipe actually states. I think it would've been a runny, bland mess had I made it to the t. That said, here are the changes I made. I cooked my chicken the way I would as if I were making chicken tacos and thats by taking chicken in a pan, with a tablespoon of butter and sauteeing and then adding a package of taco seasoning. I'm sooooo glad I did this. I think it really saved the dish. I, like other reviewers also omitted the broth and cream of celery. I used corn tortillas and everything else spice wise was the same. However, even though I seasoned my chicken, in the end the casserole overall was still just slightly too bland for my tastes. Next time I make this I might try adding another can of chilis and extra chili powder or do more taco seasoning for the chicken. Also, I have to note that a lot of people are saying that it's still too runny after not using the broth and extra can of soup. This was not the case for me. It did come out very nice and stayed in one piece when I plated it. And it also reheated beautifully. Recommend this one but only with the tweaks!

Simple Slow Cooker Meatloaf

Reviewed: Oct. 17, 2012
I made this exactly as the recipe stated and made no alterations and it turned out AMAZING. My meatloaf did not fall apart. It looked like meatloaf. That you would get in a restaurant. And tasted like it too. This recipe will for now on be my go to meatloaf recipe. And to all those reluctant to make this, do not trust the negative reviews, make it exactly as the recipe states and you will love it!

Reviewed: Sep. 17, 2012
wow is all i can say about this one. definitely do yourself a favor and add oats to your dry mixture. you will not regret it! i added around a cup or so. i also did a little under a cup of brown sugar and it was perfect. and, i also added cinnamon to my apples and a pinch of sugar. i don't usually write reviews on recipes, but this one definitely deserves it! everyone you serve it to will love it!
