Maple-Garlic Marinated Pork Tenderloin

Tried this the first time on Sunday with a port tenderloin and we are having ribs marinade in this tomorrow. This was fantastic. So I'm off to throw together this easy, delicious marinade. I used sugar free maple syrup and extra garlic.

Caramelized Oatmeal Raisin Muffins

Since my husband is a diabetic, I used Splenda Brown Sugar replacing the sugar according to Splenda directions. I used 2 TBS of wheat germ and skim milk to cut down on the fat a little. This is a knock-your-socks-off recipe!

Horseradish Sauce

This is fabulous! Hubby never puts much sauce on his beef, if any, but he kept piling this on! I didn't have any ground mustard so I used a bit of very coarsely ground mustard. We loved it!

Baked Whole Cauliflower

I too brushed the butter directly on the cauliflower. We don't particulary care that much for cauliflower, but WOW we loved it this way. This is definitely "a keeper".

Spinach Apple Salad

Instead of making the dressing I used Emeril's Rasberry Balsamic Vinegrette and put a little bit in the bottom of the bowl to flavor and preserve the apples, raisins and onion. At the last minute I put the rest of the dressing on the salad and tossed. All my guests loved it.

Marinated Beef Fondue

Wonderful marinade. I had left over meat from the fondue so I used this marinaded meat in the beef stew - it was fantastic. Will use this marinade to make my beef stew from now on.

Grandma's Corn Chowder

I didn't have any 1/2 & 1/2 so I used non-dairy creamer. I made a huge pot and there wasn't a drop left. The soup was too watery so I used a Roux to thicken it up and then got the desired consistency by adding the creamer. My guests said it was the best corn chowder they have ever had. I'll make this again.

Apple-Raisin Spinach Salad

This salad was amazing, the serving bowl was empty; everyone kept going back for seconds and thirds. I didn't bother with the dressing; I used Emeril's Rasberry Balsmic Vinegrette and I added some sweet Vidalia onion. This is definitely a keeper.
