Key Lime Pie VII

So easy and so delicious!! I didn't have enough limes so I filled in with a little bit of lemon juice. This is so yummy! I accidentally bought a shortbread crust instead of a graham cracker crust but it worked out just fine. I put whipped cream all around the edges and in the center then sprinkled some more lime zest on top. Will certainly make this again.

Round Steak Sauerbraten

My whole family loved this. I doubled the recipe but tripled the sauce and thickened it a little bit when it was finished cooking. I don't like bay leaves so I left it out. I just browned the meat then set it aside, made the sauce then added the meat back in and stuck it in the oven for 90 minutes. I made homemade noodles to go with it. This is a definite keeper for us.

Mrs. Sigg's Fresh Pumpkin Pie

This pie was delicious. Much more flavor than the canned pumpkin. I steamed my pumpkin instead of baking it. The teenage boy said it was the best pie ever.

King Ranch Chicken Casserole I

I made this but browned the onions and some garlic in olive oil prior to adding them as was suggested by another reviewer. The kids liked it and it was quick and easy. A recipe to add to our dinner rotation!

Cranberry Sauce

The first year I made this it was so tart that almost nobody ate it. The second year I used more sugar and mixed white and brown sugar together and threw a whole cinnamon stick in with it while it cooked. It went over much better. I liked it tart but I like the sweeter version a little better.

Peanut Butter Vegetable Chicken Soup

I loved this soup and strangely the "I'm not touching a vegetable EVER" 16 year old boy liked it too. I followed it exactly as written except I didn't use green pepper as it makes me sick. Mine probably needed 1 1/2 tsp of salt but I used homemade chicken stock from my dog's chicken so not much salt in it. Both kids said we should put it in the rotation. Next time I would use crushed tomatoes instead of whole since they were hard to break up! I also might swap some sweet potatoes for the regular potatoes. Great recipe!

Polenta

Basic Polenta..it's good. When I make mine I use all chicken broth or a mixture of chicken broth and water then add very crisp fried bacon and sharp cheddar cheese. I refrigerate the leftovers and make patties out of them in the morning and fry them up for breakfast. DEEEE-LISH!

Easy White Chicken Enchiladas

I made these last night and everybody liked them. I used 2 cups of Mexican cheese blend and then about 1/2 cup of sharp cheddar. I didn't use the packages of chicken, instead I cooked a whole chicken and used half the meat since I doubled the recipe. The rest is tonight's chicken and homemade noodles. I found Monteray Jack white cheese sauce near the salsas in the grocery store and it was delicious. I will definitely make it again. The 11 year old made nachos later with some of the remaining chicken and the rest of the cheese sauce!

New England Clam Chowder I

We all loved this. I used turkey bacon, used only about 1/2 cp of onion, 2 cups of water, 2 cloves of garlic, 3 cans of clams, and I forgot to add the butter. I used all the liquid from the clams and added about a tablespoon of flour to the clam juice to help it thicken up. The kids ate two bowls and made me promise to make it again! Delicious!

Carrot Cake III

I made this with a few of the modifications listed. I added half brown sugar and half white sugar, added a dash of nutmeg and since I was eating an orange at the time, I added some orange zest to the batter. I did not use the frosting directions since I had some white frosting already in the fridge so I added some orange zest, cream cheese, milk, and powdered sugar to it. This cake was very dense but so good and the next day after the frosting sat on it, it became much more moist. I would definitely make this again.

The Best Rolled Sugar Cookies

I made these and used 1 cup granulated sugar and 1 cup powdered sugar. I also added lemon zest. The lemon zest gives them a bright, different taste. They were the most delicious sugar cookies ever. I would make them again and again.
