About this Cook
I have a teen age son, a house full of rescued puppies and I love to stay active.
My favorite things to cook
Vegetarian dishes. Living in the mid-west it is hard to find vegetarian friends. It is great to have them over for supper and to show them that they can love meat free food!! It is even better when they ask for the recipe.
My favorite family cooking traditions
My mother was brought up on southern flair; wilted lettuce, pork chops, biscuits and gravy while my father's side is Irish, German Italian, so lots of great food variety!
My cooking triumphs
Learning to make the perfect loaf of bread and rolls.... my perfect baking tip: USE A thermometer to measure the temp of the water for the yeast!!
My cooking tragedies
Actually read to put 1 Tbsp of baking pwder in banana muffins... WOW... fluffy but tasted aweful! I knew it was wrong... but sure enough, it called for 1 TBSP!! The doggies got those muffins, they did not seem to mind the flavor!

Pioneer Potato Candy
My mom used to make this but rolled it out and coated with peanut butter, ten cooled and sliced and dipped in choc/coconut... I really like the added taste of peanut butter!

Almond Toffee Bark
SO VERY yummy. The toffee layer was far to thin for the amount of Almonds that the recipies called for. After I poured the frist layer of almond toffee, I made another batch of just the toffee without the almonds, and it turned out GREAT. Make sure that you wait until the toffee turns to a dark brown to get that good toffee flavor. I used high end chocolate and used the white chocolate on the dark and made pretty swirls. Note sure why but large areas of the chocolate broke away from the toffe when I was breaking it. I had some just toffee pieces, some just chocolate and aout 1/2 that was both.

Sweet Potato Casserole I
LOVE this.. I like to put marshmallow creme on the top at the very end and place back in the oven till the mallow creme puffs up and slightly browns! Puts a yummy sweet and crunchy finish on it!
