Slow Cooker Borscht

Reviewed: Oct. 19, 2012
Loved this borscht, simmered on stove top for 3 hours, rather than crock pot, left out the meat and added cup of curly kale. Froze the leftovers and it was better the second time around.

I cooked this for hubby with a few changes. I used fresh garlic, 3 cloves minced and 1/4 minced onion sauted in 2 tablespoons vegtable broth, then browned 1 lb. meat in same pan. I add taco seasoning 1/2 cup broth to browned meat and simmered for 10 mnutes. We had seconds and leftovers. Great the next day.

We both loved this sauce. It reminded me of my mothers. So quick and easy to prepare, I too used dill relish rather than chop pickles.
