About this Cook
Born and raised in New York and worked in the Restaurant industry for over 15 years. I had always been interested in cooking and encouraged to try by my parents. My father and mother both are excellent cooks and I learned most of my technique from them. Typical ‘unwritten recipe’ style so a lot of what I know was learned through actually tasting and experimentation. I hate to waste food and love to try different things. Those two points lead to mixing just about anything in the fridge to come up with new and interesting concoctions. The only problem with preparing meals that way, it never comes out the same twice and I forget to write down what ingredients I used! I love cooking for this very reason though; it’s always a fun new experiment when I get the urge to get in the kitchen! jincles@bellsouth.net
My favorite things to cook
I love to cook both home style Italian and my favorite, Puerto Rican Cuisine. My wife and friends usually come running when I offer to cook any of my PR Dishs, especially my own recipee of Mofongo, Plaintain Bruschetta, and of course the Home Made Beans and Rice.
My favorite family cooking traditions
Always, ALWAYS make big portions, invite lots of friends, play good music, make it last all afternoon, and make sure there is PLENTY of wine to go around!
My cooking triumphs
Anytime someone comes back for Seconds or ask to take some home with them! (p.s. and any of you reading this, bring me back my containers!)
My cooking tragedies
It is always a tradgedy when Rice is involved. I will admit, I can spend an entire afternoon and morning preparing, and cooking a multiple course meal and when its time to make the rice, I inevitably call in someone else. I dont know - call it a mental block but I almost ALWAYS screw up the rice... you may begin laughing now. Its pathetic.

Winter Vegetable Hash
Because I had all the ingredients on hand except for shallots, I used regualr onions and seasoned it up with a touch of chili powder and oregano just for a bit more flavor. Original recipe was fantastic, just wanted to spice it up. :)
